Chicken and Dumplings: A Cozy Homemade Classic

The secret is taking your time with the broth and handling the dumpling dough gently. Follow the steps below, and you’ll have a homemade dinner that tastes comforting, flavorful, and deeply satisfying.

What Are Chicken and Dumplings?

Chicken and dumplings is a traditional comfort-food dish built around two main components: tender chicken cooked in a flavorful broth and dumplings gently simmered directly in that broth.

There are different regional versions of the dish. Some use biscuit-style dumplings that puff up as they cook, while others feature flatter, noodle-like dumplings. This recipe uses soft, fluffy drop dumplings that are spooned directly into the simmering stew.

The result is somewhere between a hearty soup and a creamy stew, with tender chicken, vegetables, aromatic herbs, and pillowy dumplings in every serving.

Ingredients

For the Chicken and Broth

  • 2 pounds boneless, skinless chicken thighs or chicken breasts
  • 2 tablespoons butter or olive oil
  • 1 medium yellow onion, finely chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • Salt, to taste

For the Creamy Base

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream, optional

For the Dumplings

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup milk
  • 3 tablespoons melted butter

Optional Garnish

  • Fresh parsley, chopped
  • Freshly ground black pepper
  • A little grated Parmesan, if desired

Step 1: Prepare the Chicken

Start by patting the chicken dry with paper towels and seasoning it lightly with salt and black pepper.

Heat the butter or olive oil in a large heavy-bottomed pot or Dutch oven over medium heat. Add the chicken and cook for several minutes on each side, just until lightly browned.

The chicken does not need to be completely cooked through at this point. Browning it first creates flavorful bits on the bottom of the pot that will eventually become part of the broth.

Transfer the chicken to a plate and set it aside.

Step 2: Build the Vegetable Base

Add the chopped onion, carrots, and celery to the same pot.

Cook for about 5–7 minutes, stirring occasionally, until the vegetables begin to soften. If the bottom of the pot has browned bits from the chicken, stir the vegetables through them. They will help absorb that concentrated flavor.

Add the minced garlic and cook for another 30–60 seconds, just until fragrant.

Be careful not to let the garlic burn, as burnt garlic can give the entire dish a bitter flavor.

Step 3: Make the Savory Broth

Return the chicken to the pot and pour in the chicken broth.

Add the thyme, parsley, bay leaf, and black pepper. Stir everything together and bring the mixture to a gentle simmer.

Reduce the heat to low or medium-low, cover the pot partially, and let the chicken cook gently for approximately 20–25 minutes, depending on the thickness of the pieces.

The goal is tender chicken and a broth that has absorbed the flavors of the vegetables and herbs.
