Step 4 — Create the Creamy Sauce

Slowly pour in the chicken broth while stirring constantly to avoid lumps. Once smooth, add the milk or cream. Bring the mixture to a gentle simmer. It will begin to thicken into a velvety, creamy sauce.

Step 5 — Add the Chicken and Seasonings

Stir in the cooked chicken, thyme, black pepper, peas (if using), and salt to taste. Let everything simmer together for 3–5 minutes so the flavors blend. Remove from heat and allow the mixture to cool slightly — this makes assembling the pies easier.

Preheat your oven to 400°F (200°C).

Lay out your puff pastry sheets on a lightly floured surface. Cut them into circles or squares depending on your pie molds. You will need a base and a top for each pie.

Press the bottom pastry pieces into your pie tins. Make sure there are no air pockets.

Spoon the creamy chicken and mushroom filling into each pastry base. Don’t overfill—leave a small space at the top so the pies don’t overflow when baking.

Place the pastry lids on top and press the edges together to seal. You can crimp the edges with a fork for a pretty finish.

Brush the tops with the beaten egg to give the pies a golden, glossy crust.

Transfer the pies to the oven and bake for 20–25 minutes, or until the pastry is puffed, crisp, and beautifully golden brown.

Let them cool for a few minutes before serving—this also helps the filling set.
