Coconut Chocolate Chip Gooey Bars
If you love desserts that are soft, chewy, buttery, and loaded with chocolate, these Coconut Chocolate Chip Gooey Bars are an easy treat to keep in your baking rotation. They combine the rich flavor of chocolate chips with sweet, tender coconut and a soft center that stays wonderfully gooey after baking.
These bars are simple enough for a casual weekend dessert but delicious enough to serve at parties, potlucks, holidays, or afternoon gatherings. Unlike a traditional cookie that needs to be portioned and baked in batches, everything comes together in one pan, making these bars especially convenient.
Why You’ll Love These Gooey Bars
The best part of these bars is their texture. The edges become lightly golden and chewy while the center remains soft and rich. Shredded coconut adds a pleasant texture and subtle tropical sweetness, while chocolate chips melt into little pockets of chocolate throughout the batter.
They also require straightforward ingredients and basic baking equipment, so you don’t need any complicated techniques to make them.
Ingredients
For the Bars
- 1 cup unsalted butter, melted and slightly cooled
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups semi-sweet chocolate chips
- 1 cup sweetened shredded coconut
Optional Topping
- 1/3 cup additional chocolate chips
- 1/4 cup shredded coconut
- A small pinch of flaky sea salt
Step 1: Prepare the Baking Pan
Begin by preheating your oven to 350°F (175°C).
Line a 9-by-13-inch baking pan with parchment paper, leaving a little overhang on two sides. This makes it much easier to lift the finished bars from the pan once they have cooled.
Lightly grease the parchment and any exposed sides of the pan. Set it aside while you prepare the batter.
Step 2: Combine the Melted Butter and Sugars
Pour the melted butter into a large mixing bowl. Add the brown sugar and granulated sugar.
Whisk the mixture until the sugars are evenly incorporated and the mixture looks smooth and glossy.
Using melted butter rather than softened butter gives these bars a dense, chewy texture instead of making them cakey.
