Conchitas with Ground Beef

 

Instructions

  1. Cook the Beef

    • Heat olive oil in a large pot over medium heat.

    • Add ground beef, season with salt and pepper, and cook until browned, breaking it apart with a spoon.

  2. Add Pasta & Base Flavors

    • Stir in the conchita shells, garlic, tomatoes, chicken broth, tomato sauce, and cumin.

    • Reduce heat to low and simmer for 20 minutes, stirring occasionally.

  3. Add Vegetables & Spices

    • Mix in oregano, carrots, zucchini (if using), and bay leaves.

    • Continue simmering for 15 minutes, or until the pasta is tender.

  4. Finish with Onion

    • Stir in the remaining chopped white onion.

    • Simmer for about 5 minutes until softened.

  5. Serve

    • Remove bay leaves.

    • Spoon over warm cooked rice and serve hot.


Notes & Tips

  • No conchitas? Substitute with small pasta like ditalini, elbows, or acini di pepe.

  • Heat it up: Add diced jalapeños, corn, or a pinch of red pepper flakes.

  • Make it heartier: Toss in bell peppers or extra veggies of your choice.

  • Serving idea: Top with queso fresco, avocado slices, or fresh cilantro for a traditional touch.
