Cook the Beef

Heat olive oil in a large pot over medium heat.

Add ground beef, season with salt and pepper, and cook until browned, breaking it apart with a spoon.

Add Pasta & Base Flavors

Stir in the conchita shells, garlic, tomatoes, chicken broth, tomato sauce, and cumin.

Reduce heat to low and simmer for 20 minutes, stirring occasionally.

Add Vegetables & Spices

Mix in oregano, carrots, zucchini (if using), and bay leaves.

Continue simmering for 15 minutes, or until the pasta is tender.

Finish with Onion

Stir in the remaining chopped white onion.

Simmer for about 5 minutes until softened.

Serve
-
Remove bay leaves.

Spoon over warm cooked rice and serve hot.

No conchitas? Substitute with small pasta like ditalini, elbows, or acini di pepe.
