Country Ham Salad is a classic Southern-style dish that transforms the rich, salty flavor of cured country ham into a creamy and satisfying spread. Popular at family gatherings, church picnics, holiday brunches, and afternoon tea tables, this versatile recipe can be served as a sandwich filling, a cracker spread, or a topping for fresh vegetables. Its appeal lies in the balance between savory ham, creamy dressing, and crunchy vegetables that create a delightful combination of flavors and textures.

What Is Country Ham Salad?

Unlike traditional deli ham salads made with mild cooked ham, Country Ham Salad uses dry-cured country ham, which has a deeper, more concentrated flavor. The ham is finely chopped or ground and mixed with mayonnaise and seasonings. Many versions also include celery, onions, pickles, or relish to add freshness and crunch.

The result is a hearty spread with a distinctive Southern character—salty, creamy, tangy, and incredibly flavorful.

Ingredients

To prepare approximately 6 servings, gather the following ingredients:

  • 2 cups cooked country ham, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 celery stalk, finely diced
  • 2 tablespoons finely minced red onion
  • 1 teaspoon Dijon mustard
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon lemon juice
  • Optional: a pinch of paprika or cayenne pepper for extra flavor

Equipment Needed

  • Cutting board
  • Sharp knife
  • Food processor (optional)
  • Mixing bowl
  • Spoon or spatula

Step-by-Step Method

Step 1: Prepare the Country Ham

If the country ham is very salty, soak it briefly in cold water before cooking. Simmer or bake the ham until fully heated and tender. Allow it to cool completely.

Once cooled, remove any excess fat and cut the meat into small chunks.

Step 2: Chop the Ham

Using a sharp knife, finely mince the ham until it reaches a texture similar to coarse crumbs. Alternatively, pulse the ham in a food processor several times. Avoid over-processing, as the mixture should retain some texture rather than becoming a paste.

Step 3: Prepare the Vegetables

Wash the celery thoroughly and dice it into very small pieces. Finely mince the onion to ensure it blends evenly throughout the salad. If using homemade pickles, chop them finely as well.

Step 4: Create the Dressing Base

In a medium mixing bowl, combine:

  • Mayonnaise
  • Dijon mustard
  • Lemon juice
  • Black pepper

Stir until the mixture becomes smooth and uniform.
