Cream Cheese Corn Casserole: A Rich, Creamy Comfort-Food Classic

Cream Cheese Corn Casserole is the kind of side dish that turns simple pantry ingredients into something warm, creamy, and irresistibly comforting. Sweet corn is combined with smooth cream cheese, butter, and a lightly seasoned creamy mixture, then baked until the edges are golden and the center is rich and tender.

Unlike a traditional corn pudding, this casserole has a particularly luscious texture from the cream cheese. The corn still provides little bursts of sweetness and texture, while the creamy base brings everything together. It is easy enough for a weeknight dinner but special enough for holidays, potlucks, and family gatherings.

Ingredients

For approximately 6–8 servings, you will need:

  • 4 cups corn kernels, fresh, frozen, or canned and drained
  • 8 ounces cream cheese, softened and cut into cubes
  • 4 tablespoons unsalted butter
  • ½ cup sour cream
  • ½ cup milk
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup shredded cheddar cheese, optional
  • 2 tablespoons chopped fresh parsley or green onions, optional

Step 1: Prepare the Oven and Baking Dish

Begin by preheating your oven to 350°F (175°C).

Lightly grease a medium-sized baking dish, approximately 8×8 inches or a similar 2-quart casserole dish. Greasing the dish prevents the creamy mixture from sticking and makes serving much easier.

If you are using frozen corn, allow it to thaw first and drain away any excess water. If using canned corn, drain it thoroughly. Too much liquid can make the casserole watery.

Step 2: Soften the Cream Cheese

Place the softened cream cheese in a large mixing bowl.

Softening the cream cheese is important because it allows it to blend smoothly with the other ingredients. Cold cream cheese tends to remain in small lumps, whereas room-temperature cream cheese incorporates much more easily.

Add the melted butter and stir until the mixture is smooth and creamy.

Step 3: Create the Creamy Base

Add the sour cream, milk, eggs, flour, sugar, salt, black pepper, and garlic powder to the cream cheese mixture.

Whisk everything together until well combined.

The small amount of flour helps the casserole set as it bakes, while the eggs give the mixture structure. The sugar is not meant to make the dish taste sweet like a dessert; instead, it subtly enhances the natural sweetness of the corn.
