
Creamy Cucumber, Corn and Shrimp Salad
Creamy Cucumber, Corn and Shrimp Salad is a refreshing, satisfying dish that brings together crisp vegetables, sweet corn, tender shrimp, and a smooth, tangy dressing. It is light enough for a warm-weather lunch but hearty enough to serve as a side dish alongside grilled meats, sandwiches, or a simple dinner.
The combination works especially well because every ingredient adds a different texture. Cool cucumber provides crunch, sweet corn adds a gentle sweetness, and shrimp brings a tender, savory bite. A creamy dressing ties everything together without overpowering the fresh flavors.
Ingredients
For the Salad
- 1 pound medium shrimp, peeled, deveined, and tails removed
- 2 large cucumbers, diced
- 1 ½ cups sweet corn, cooked and cooled
- ½ small red onion, finely diced
- 2 tablespoons fresh parsley or dill, chopped
- 1 tablespoon fresh lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Creamy Dressing
- ½ cup mayonnaise
- ¼ cup sour cream or plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 small garlic clove, finely minced
- ½ teaspoon sugar or honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1–2 tablespoons fresh dill, chopped
Step 1: Prepare the Shrimp
Begin by preparing the shrimp. If using frozen shrimp, thaw it completely and pat it dry with paper towels. Removing excess moisture helps the shrimp cook properly rather than becoming watery.
Bring a medium pot of lightly salted water to a gentle boil. Add the shrimp and cook for approximately 2–3 minutes, depending on their size. The shrimp are ready when they turn pink and opaque and curl into a loose C shape.
Avoid overcooking them. Shrimp can become rubbery surprisingly quickly.
Once cooked, immediately drain the shrimp and transfer them to a bowl of cold water for a minute or two. Drain again and allow them to cool completely.
For larger shrimp, cut them into bite-sized pieces. Smaller shrimp can be left whole.
Step 2: Prepare the Vegetables
While the shrimp cool, prepare the vegetables.
Wash the cucumbers thoroughly and dice them into small, bite-sized pieces. If the cucumbers contain a lot of seeds or excess water, you can remove the watery center before chopping.
Finely dice the red onion. The onion provides a mild sharpness that balances the sweetness of the corn and the creaminess of the dressing.
If you’re using frozen corn, cook it according to the package directions and allow it to cool completely. Canned corn should be drained and rinsed well before using.
Fresh herbs such as dill or parsley add brightness and make the salad taste fresher.
Step 3: Make the Creamy Dressing
In a small bowl, combine the mayonnaise and sour cream or Greek yogurt.
Add the lemon juice, Dijon mustard, minced garlic, sugar or honey, salt, black pepper, and chopped dill.
Whisk everything together until the dressing becomes smooth and creamy.
Taste the dressing before adding it to the salad. If you prefer a brighter flavor, add another small splash of lemon juice. If you want a slightly sweeter dressing, add a tiny amount of additional honey or sugar.
The dressing should taste flavorful on its own but not overly salty, since the shrimp and vegetables will contribute additional flavor.
