Creamy Thousand Island Macaroni: A Tangy, Creamy Pasta Salad Everyone Will Love

If you enjoy creamy pasta salads with a little sweetness, a touch of tang, and plenty of flavor, Creamy Thousand Island Macaroni is a recipe worth adding to your collection. It combines tender macaroni with a rich Thousand Island-style dressing, crisp vegetables, and simple seasonings to create a colorful dish that works beautifully as a side, light lunch, or potluck favorite.

What makes this macaroni salad especially appealing is its balance. The pasta provides a soft, comforting base, while crunchy vegetables add freshness and texture. The creamy dressing brings everything together with its familiar combination of mayonnaise, ketchup, sweetness, and tanginess.

Why You’ll Love This Macaroni Salad

This recipe is:

  • Creamy and flavorful without requiring complicated ingredients
  • Easy to prepare with basic pantry staples
  • Great for make-ahead meals, since the flavors develop as it chills
  • Customizable, allowing you to adjust the vegetables and dressing to your taste
  • Perfect for gatherings, picnics, lunches, and family dinners

The key is not simply mixing everything together. A few small preparation techniques—especially properly cooking and cooling the macaroni—make a noticeable difference in the finished salad.

Ingredients

For the Macaroni Salad

  • 2 cups uncooked elbow macaroni
  • 1/2 cup finely diced carrots
  • 1/2 cup finely diced cucumber
  • 1/3 cup finely diced red bell pepper
  • 1/4 cup finely diced red onion
  • 1/3 cup sweet pickle relish
  • 2 hard-boiled eggs, chopped
  • 2 tablespoons chopped fresh parsley, optional
  • Salt and black pepper, to taste

For the Creamy Thousand Island Dressing

  • 3/4 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon finely minced onion
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar or honey
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • A small pinch of salt
  • Black pepper, to taste

You can adjust the dressing depending on whether you prefer your macaroni salad mildly tangy, sweeter, or extra creamy.

Step 1: Prepare the Macaroni

Bring a large pot of generously salted water to a boil. Add the elbow macaroni and cook according to the package directions until tender but still slightly firm.

Avoid overcooking the pasta. Very soft macaroni can become mushy once it is mixed with the dressing and refrigerated.

Once the macaroni is ready, drain it thoroughly.

For the best texture, rinse the pasta briefly under cool running water. This stops the cooking process and removes excess surface starch that could otherwise make the salad overly sticky.

Transfer the macaroni to a large mixing bowl and allow it to cool completely.

A useful tip

Do not mix hot pasta with the mayonnaise-based dressing. Warm macaroni can loosen the dressing and make the finished salad less creamy.

Step 2: Prepare the Vegetables

While the macaroni cools, prepare the vegetables.

Finely dice the carrots, cucumber, red bell pepper, and red onion. Try to keep the pieces relatively small and similar in size.

This is more than a presentation trick. Smaller pieces distribute throughout the pasta, so you get a little crunch and flavor in nearly every bite.

If your cucumber is particularly watery, remove some of the seeds before dicing it. Excess moisture can thin the dressing.

Chop the hard-boiled eggs and set them aside.

Step 3: Make the Thousand Island-Style Dressing

In a separate bowl, combine the mayonnaise and ketchup.

Add the sweet pickle relish, minced onion, apple cider vinegar, sugar or honey, paprika, garlic powder, salt, and black pepper.

Whisk everything together until the dressing is smooth and evenly combined.

Taste it before adding it to the pasta.

If you want more tang, add a tiny splash of vinegar. If you prefer a sweeter dressing, add a little more sugar or honey. For a richer salad, add another spoonful of mayonnaise.

The goal is a dressing that tastes slightly stronger than you might expect on its own because the macaroni and vegetables will mellow its flavor.

Step 4: Combine the Pasta and Vegetables

Once the macaroni has cooled, add the diced carrots, cucumber, bell pepper, red onion, sweet pickle relish, and chopped eggs.

Add the parsley if using.

Gently toss the ingredients together.

Avoid vigorous stirring because the cooked macaroni can break apart, especially if it has been cooked until very soft.
