Crinkle Cheese Phyllo Pie: A Crispy, Creamy, Golden Savory Pie Recipe
Crinkle Cheese Phyllo Pie is a beautiful savory pastry made with thin sheets of phyllo dough, melted butter, eggs, milk, and cheese. The phyllo sheets are folded or “crinkled” into soft waves, then baked until the top becomes golden and crisp while the inside stays tender, cheesy, and custard-like.
This recipe is popular because it looks impressive but is surprisingly simple to make. Instead of carefully layering every sheet flat, the phyllo is gently gathered into folds, creating a textured surface with crispy edges and soft pockets that hold the creamy cheese filling. It is perfect for breakfast, brunch, lunch, dinner, tea time, or as a side dish for soups and salads.
What Makes Crinkle Cheese Phyllo Pie Special?
The best part of this pie is the contrast of textures. The top becomes flaky and crunchy, while the middle absorbs the egg and milk mixture, creating a soft, rich filling. The cheese melts between the folds of phyllo, giving every bite a salty, creamy, buttery flavor.
The crinkle method also makes the pie easier than traditional layered pastries. You do not need to make homemade dough, and you do not need perfect pastry skills. The folds are meant to look rustic, airy, and slightly uneven.
Ingredients
For the Phyllo Base
- 1 package phyllo dough, thawed
- ½ cup unsalted butter, melted
- 2 tablespoons olive oil, optional
For the Cheese Filling
- 1 ½ cups crumbled feta cheese
- 1 cup shredded mozzarella cheese
- ½ cup ricotta cheese or cottage cheese
- ½ cup shredded cheddar or kasseri cheese, optional
- 2 tablespoons chopped parsley or dill, optional
- ½ teaspoon black pepper
For the Custard Mixture
- 3 large eggs
- 1 cup whole milk
- ½ cup plain yogurt or sour cream
- ¼ cup heavy cream, optional for extra richness
- ½ teaspoon salt, or to taste
- ½ teaspoon baking powder, optional for a slightly puffier texture
For the Top
- 1 tablespoon sesame seeds, optional
- 1 tablespoon extra melted butter
- A small pinch of black pepper or dried herbs
Step 1: Thaw the Phyllo Dough Properly
Phyllo dough is very thin and delicate, so it should be thawed carefully. If it is frozen, place it in the refrigerator overnight. Then let it sit at room temperature for about 30 minutes before using.
Do not open the package too early because phyllo dries out quickly. Once opened, cover the sheets with a slightly damp clean towel while working. This keeps them soft and prevents cracking.
Step 2: Prepare the Baking Dish
Preheat the oven to 350°F / 175°C.
Choose a medium baking dish, such as a 9×13 inch pan, round pie dish, or rectangular oven dish.
Brush the bottom and sides of the dish with melted butter. This prevents sticking and helps the bottom layer become golden.
