Crispy Oven-Baked Peppered Bacon Strips

There is something wonderfully satisfying about perfectly cooked bacon: crisp edges, golden-brown color, a smoky aroma, and just enough black pepper to give every bite a gentle kick. While frying bacon on the stovetop works, it can leave you standing over a hot skillet, dealing with splattering grease and unevenly cooked strips.

Oven-baking offers a much easier approach. The bacon cooks gradually and evenly, allowing the fat to render while the strips become beautifully crisp. A generous sprinkle of freshly cracked black pepper adds a simple savory contrast that makes these bacon strips especially delicious.

Whether you’re preparing breakfast, topping a burger, adding crunch to a sandwich, or simply serving bacon alongside eggs and toast, this method is reliable and uncomplicated.

Why Oven-Baked Bacon Works So Well

The oven provides steady, surrounding heat, so the bacon doesn’t have to be constantly flipped or monitored. As it cooks, the fat slowly renders away from the meat, helping the strips develop a crisp texture.

Using a rimmed baking sheet is particularly helpful because it keeps the rendered bacon fat contained. Lining the pan with parchment paper or aluminum foil also makes cleanup much easier.

The real secret is patience. Bacon may look slightly soft when it first comes out of the oven, but it continues to firm up as it cools for a few minutes.

Ingredients

  • 1 pound thick-cut or regular-cut bacon
  • 1 to 1½ teaspoons freshly cracked black pepper, or to taste
  • Optional: a tiny pinch of brown sugar for a sweet-and-peppery variation

Equipment

  • Large rimmed baking sheet
  • Parchment paper or aluminum foil
  • Wire rack, optional
  • Tongs
  • Paper towels

Step-by-Step Method

Step 1: Prepare the Oven

Preheat your oven to 400°F (200°C).

Starting with a properly heated oven helps the bacon cook consistently. If your oven tends to run hot, you can use 375°F (190°C) and allow the bacon a little more time.

Step 2: Prepare the Baking Sheet

Line a large rimmed baking sheet with parchment paper or aluminum foil.

For especially crisp bacon, place an oven-safe wire rack over the lined baking sheet. The rack allows rendered fat to drip below the bacon while hot air circulates around the strips.

A rack isn’t absolutely necessary, though. Bacon baked directly on the lined pan can still become wonderfully crisp.

Step 3: Arrange the Bacon

Place the bacon strips in a single layer.

Try not to overlap them. The strips will shrink as they cook, so leaving a little space between them helps them brown more evenly.

If you’re using thick-cut bacon, you may need slightly more cooking time than you would for thin-cut bacon.
