  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper, optional
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

For Coating

  • ¾ cup panko breadcrumbs
  • 2 tablespoons grated parmesan cheese, optional
  • ¼ teaspoon paprika

For Cooking

  • 2 to 3 tablespoons oil
  • 1 tablespoon butter, optional for extra flavor

Optional Dipping Sauce

  • ½ cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce
  • 1 small garlic clove, grated
  • Salt and pepper to taste

Step 1: Prepare the Shrimp

Start by rinsing the shrimp under cold water, then pat them very dry with paper towels. This is important because too much moisture can make the shrimp cake mixture loose and difficult to shape.

Remove the shells and tails if they are still attached. Make sure the shrimp are deveined.

Place the shrimp on a cutting board. Chop half of the shrimp very finely, almost like a rough paste. Chop the other half into small pieces. This gives the cakes the best texture: the finely chopped shrimp helps hold the cakes together, while the larger pieces give a juicy bite.

Step 2: Mix the Shrimp Cake Base

Place the chopped shrimp into a large mixing bowl.

Add the egg, mayonnaise, Dijon mustard, green onions, garlic, parsley, cilantro if using, lemon zest, lemon juice, salt, black pepper, paprika, cayenne pepper, onion powder, and garlic powder.

Mix gently until everything is combined.

The mayonnaise helps keep the shrimp cakes moist, while the mustard and lemon add brightness. The herbs make the cakes taste fresh instead of heavy.

Step 3: Add the Breadcrumbs

Add ½ cup panko breadcrumbs to the shrimp mixture.

Stir gently until the mixture begins to hold together. Do not overmix, because shrimp can become tough if handled too much.

The mixture should feel moist but shapeable. If it feels too wet, add one or two extra tablespoons of panko. If it feels too dry, add a small spoon of mayonnaise or lemon juice.
