Crockpot Beef and Noodles: A Comforting Slow-Cooked Classic Recipe

Crockpot Beef and Noodles is a hearty, old-fashioned comfort meal made with tender slow-cooked beef, rich savory broth, and soft noodles coated in delicious flavor. This recipe is the perfect example of how simple ingredients can transform into a warm, satisfying dinner when cooked slowly.

The slow cooker does most of the work, allowing the beef to become incredibly tender while the broth develops a deep, rich taste. The final dish is creamy, savory, and filling, making it perfect for family dinners, busy weeknights, cold weather meals, or a cozy weekend gathering.

What Makes Crockpot Beef and Noodles Special?

The secret to this recipe is the slow cooking process. Instead of quickly cooking the beef, the crockpot gently breaks down the meat over several hours, making it soft enough to fall apart with a fork.

The noodles absorb the flavorful broth, creating a dish that is similar to a homemade beef stew combined with a comforting bowl of pasta.

The best Crockpot Beef and Noodles has:

  • Tender, juicy beef
  • A rich and flavorful gravy-like broth
  • Soft noodles that soak up the seasoning
  • A balance of savory herbs and slow-cooked flavors

Ingredients

For the Beef

  • 2 ½ to 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

For the Slow Cooker

  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce, optional
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 2 tablespoons butter

For the Noodles

  • 12 ounces egg noodles
  • ½ cup heavy cream or sour cream, optional for a creamy version
  • Fresh parsley for garnish

Step 1: Prepare the Beef

Start by cutting the chuck roast into large chunks if desired.

Pat the beef dry with paper towels. Removing excess moisture helps the seasoning stick better and improves the flavor.

Season all sides of the beef with salt, black pepper, garlic powder, onion powder, and paprika.

The seasoning creates a flavorful crust on the outside of the meat while it cooks.

Step 2: Sear the Beef (Optional but Recommended)

Heat olive oil in a large skillet over medium-high heat.

Add the seasoned beef and sear each side for about 2 to 3 minutes until browned.

Searing is not required, but it adds a deeper roasted flavor because the browned surface creates extra savory notes.

Once browned, transfer the beef to the slow cooker.

Step 3: Prepare the Crockpot Base

Place the sliced onions and minced garlic at the bottom of the slow cooker.

The onions will cook down and become sweet, while the garlic adds a warm savory flavor.

Place the beef on top of the onions.

Add the beef broth, Worcestershire sauce, soy sauce if using, thyme, parsley, bay leaf, and butter.

The liquid should surround the beef but does not need to completely cover it.
