Crockpot Hamburger Steaks with Mushroom Gravy: A Comforting Slow-Cooked Dinner Recipe
Crockpot Hamburger Steaks with Mushroom Gravy is a warm, hearty, and satisfying comfort-food meal made with seasoned ground beef patties, tender mushrooms, onions, and a rich brown gravy. The slow cooker makes the hamburger steaks soft, flavorful, and juicy while the gravy becomes deep, savory, and perfect for serving over mashed potatoes, rice, noodles, or biscuits.
This recipe is ideal for busy days because most of the cooking happens in the crockpot. You prepare the patties, brown them briefly for extra flavor, layer them with mushrooms and gravy, then let everything cook slowly until tender.
Why This Recipe Works
Hamburger steaks are simple, but slow cooking gives them a rich homemade taste. The beef patties absorb the flavor of the gravy, mushrooms, onions, garlic, and seasonings. Browning the patties first gives them a better texture and prevents them from falling apart in the slow cooker.
The mushroom gravy is the heart of the dish. It is creamy, savory, and thick enough to coat the hamburger steaks beautifully. By the end of cooking, the patties become tender, the mushrooms soften, and the gravy tastes like it has been simmering all day.
Ingredients
For the Hamburger Steaks
- 2 pounds ground beef
- ½ cup breadcrumbs
- 1 large egg
- 1 small onion, finely grated or minced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon oil, for browning
For the Mushroom Gravy
- 2 cups sliced mushrooms
- 1 medium onion, sliced
- 2 cups beef broth
- 1 can cream of mushroom soup
- 1 packet brown gravy mix
- 1 tablespoon Worcestershire sauce
- ½ teaspoon black pepper
- ½ teaspoon dried thyme, optional
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Step 1: Prepare the Beef Mixture
Place the ground beef in a large mixing bowl. Add breadcrumbs, egg, minced onion, garlic, Worcestershire sauce, salt, black pepper, onion powder, garlic powder, and paprika.
Mix gently with your hands or a spoon until everything is combined.
Do not overmix the meat. If you mix too much, the patties can become firm and dense instead of tender.
Step 2: Shape the Hamburger Steaks
Divide the beef mixture into 6 to 8 equal portions.
Shape each portion into an oval or round patty, about ¾ inch thick. Press a small shallow dent in the center of each patty with your thumb. This helps the patties cook evenly and keeps them from puffing up too much.
Place the shaped patties on a plate while you heat the skillet.
Step 3: Brown the Patties
Heat oil in a large skillet over medium-high heat.
Add the patties in batches and sear them for about 2 minutes per side. They do not need to be fully cooked at this stage. The goal is only to brown the outside.
Browning adds flavor and helps the patties hold their shape during slow cooking.
After browning, transfer the patties to a plate.
Step 4: Prepare the Mushroom Gravy Mixture
In a bowl, whisk together the beef broth, cream of mushroom soup, brown gravy mix, Worcestershire sauce, black pepper, and thyme if using.
Mix until smooth. The gravy will look thin at first, but it will thicken as it cooks.
If you want a stronger mushroom flavor, you can add an extra handful of sliced mushrooms.
