Crockpot Rotel Sausage Dip: A Creamy, Cheesy Party Dip Made Step by Step

Crockpot Rotel Sausage Dip is a warm, rich, and cheesy appetizer made with ground sausage, Rotel tomatoes, cream cheese, and melted cheese. It is one of those easy slow-cooker recipes that tastes perfect for parties, game days, family gatherings, movie nights, or holiday snack tables.

This dip is creamy, slightly spicy, savory, and full of flavor. The sausage gives it a hearty taste, the Rotel adds tomatoes and green chilies, and the cheese melts everything into a smooth, scoopable dip. The best part is that the crockpot keeps it warm for hours, so guests can enjoy it without you standing in the kitchen.

What Is Rotel Sausage Dip?

Rotel Sausage Dip is a classic Southern-style party dip usually made with sausage, canned Rotel tomatoes, and cheese. Rotel is a mix of diced tomatoes and green chilies, which gives the dip a little heat and a bright tomato flavor.

Using a crockpot makes the recipe even easier. After browning the sausage, everything goes into the slow cooker and melts together into a creamy dip.

Ingredients

  • 1 pound ground breakfast sausage or spicy sausage
  • 1 can Rotel diced tomatoes and green chilies, undrained
  • 8 oz cream cheese, cubed
  • 16 oz Velveeta cheese or processed cheese, cubed
  • 1 cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika, optional
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili flakes, optional
  • 2 tablespoons milk, optional if the dip is too thick

For Serving

  • Tortilla chips
  • Crackers
  • Pretzel bites
  • Toasted bread
  • Celery sticks
  • Carrot sticks
  • Mini bell peppers

Step 1: Cook the Sausage

Start by placing a skillet over medium heat. Add the ground sausage and break it apart with a spoon or spatula.

Cook the sausage until it is fully browned and no pink remains. Stir often so it cooks evenly and forms small crumbles.

This step is important because browning the sausage before adding it to the crockpot gives the dip better flavor and prevents excess grease from making the dip oily.

Step 2: Drain the Grease

Once the sausage is cooked, carefully drain the excess grease.

You can place the cooked sausage on a paper towel-lined plate for a minute to remove extra oil.

Do not skip this step, especially if the sausage is fatty. Too much grease can separate from the cheese and make the dip look heavy.

Step 3: Prepare the Cheese

Cut the cream cheese and Velveeta into small cubes.

Cubing the cheese helps it melt faster and more evenly in the crockpot.

If you only add large blocks of cheese, the dip will take longer to melt and may need more stirring.
