  • 2 cups heavy cream
  • 1 cup whole milk
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 teaspoon dried thyme or parsley

Optional Additions

  • 6 slices cooked bacon, crumbled
  • ½ cup sour cream
  • Fresh parsley for garnish
  • Green onions
  • Ham pieces
  • Gruyère cheese for a richer flavor

Step 1: Prepare the Potatoes

Begin by washing and peeling the potatoes.

Using a sharp knife or a mandoline slicer, cut the potatoes into thin slices about ⅛ inch thick.

Uniform slices are important because they allow the potatoes to cook evenly. If some slices are thick and others are thin, the thinner pieces may become mushy while thicker pieces remain firm.

After slicing, place the potatoes in cold water for a few minutes to remove some excess starch. Drain them well and pat them dry.

This helps create a smoother sauce and prevents the potatoes from becoming overly sticky.


Step 2: Prepare the Onion and Garlic

Thinly slice the onion and mince the garlic.

For extra flavor, you can lightly sauté the onion in butter for 3 to 5 minutes before adding it to the slow cooker. This softens the onion and brings out its natural sweetness.

If you prefer a quicker method, you can add the raw onion directly to the crockpot. It will soften beautifully during slow cooking.


Step 3: Make the Creamy Sauce

In a medium bowl, whisk together:

  • Heavy cream
  • Milk
  • Flour
  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Paprika
  • Thyme

Whisk until the flour is fully dissolved and the mixture is smooth.

The flour helps thicken the sauce as the potatoes cook. Without it, the dish may become too watery.

For an extra rich flavor, add sour cream to the sauce mixture.


Step 4: Grease the Crockpot

Lightly grease the inside of the slow cooker with butter or cooking spray.

This prevents the potatoes from sticking and makes cleanup easier.

A 6-quart slow cooker works well for this recipe.
