French Onion Cheesy Potato Rounds: A Golden, Savory Step-by-Step Recipe

French Onion Cheesy Potato Rounds are a rich, crispy, and flavorful potato appetizer inspired by the deep caramelized flavor of French onion soup. Thick potato slices are roasted until tender, topped with buttery onions, melted cheese, and herbs, then baked again until golden and bubbly.

This recipe is perfect as a side dish, party snack, game-day appetizer, or comfort-food treat. Each potato round has a soft center, crisp edges, sweet onion topping, and a warm cheesy finish.

What Makes This Recipe Special?

The flavor comes from two main parts: roasted potatoes and French onion-style topping. The potatoes give a hearty base, while slowly cooked onions add sweetness and depth. Cheese melts over the top and creates a golden layer that makes the dish taste rich and satisfying.

It is like a mini version of French onion soup served on crispy potato slices instead of bread.

Ingredients

For the Potato Rounds

  • 4 large potatoes, russet or Yukon gold
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • ½ teaspoon dried thyme or Italian seasoning

For the French Onion Topping

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar, optional
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • ¼ cup beef broth or vegetable broth
  • ½ teaspoon dried thyme

For the Cheese Topping

  • 1 cup shredded Gruyère cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • Fresh parsley for garnish

Gruyère gives the most classic French onion flavor, but Swiss cheese, provolone, cheddar, or mozzarella can also work.

Step 1: Prepare the Potatoes

Wash the potatoes well because the skin will stay on. The skin helps the rounds hold their shape and gives the edges a rustic crispy texture.

Slice the potatoes into thick rounds, about ½ inch thick. Try to keep all slices the same thickness so they cook evenly.

Place the potato slices in a large bowl.

Step 2: Season the Potato Rounds

Drizzle the potato slices with olive oil.

Add garlic powder, onion powder, paprika, salt, black pepper, and dried thyme.

Toss everything together until each potato slice is coated on both sides.

This seasoning layer gives the potatoes flavor before the onion and cheese are added.

Step 3: Roast the Potatoes

Preheat the oven to 425°F / 220°C.

Line a baking sheet with parchment paper or lightly grease it with oil.

Arrange the potato rounds in a single layer. Do not stack them, because they need space to roast properly.

Bake for 25 to 30 minutes, flipping halfway through, until the potatoes are golden on the outside and tender in the center.
