Ingredients

For the Salisbury Steaks

  • 1½ pounds ground beef
  • ½ cup breadcrumbs
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste

For the French Onion Gravy

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste

For the Topping

  • 4–6 slices Swiss cheese or Gruyère cheese
  • Fresh parsley for garnish

Step 1: Prepare the Beef Mixture

In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.

Use clean hands or a spoon to mix everything gently until just combined. Avoid overmixing, as this can make the steaks dense instead of tender.

Divide the mixture into oval-shaped patties. You should get about four to six steaks depending on the size you prefer.

Place the patties on a plate while preparing the skillet.

Step 2: Caramelize the Onions

The onions are the heart of this recipe. Slow cooking brings out their natural sweetness and creates the signature French onion flavor.

Heat butter and olive oil in a large skillet over medium heat. Add the sliced onions and stir to coat them evenly.

Cook the onions slowly for about 20–25 minutes, stirring occasionally. They should become soft, golden brown, and deeply caramelized.

Do not rush this step. Proper caramelization creates the rich flavor that makes the gravy taste incredible.

Once caramelized, transfer half the onions to a plate and leave the remaining onions in the skillet.

Step 3: Brown the Salisbury Steaks

Increase the skillet heat slightly to medium-high.

Add the beef patties to the skillet and cook for about 4–5 minutes per side until nicely browned. The steaks do not need to be fully cooked at this stage because they will finish simmering in the gravy later.

Remove the patties and set them aside.

Step 4: Build the French Onion Gravy

Reduce the heat to medium.

Add the minced garlic to the onions left in the skillet and cook for about 30 seconds until fragrant.

Sprinkle the flour over the onions and stir continuously for about one minute. This helps thicken the gravy while removing the raw flour taste.

Slowly pour in the beef broth while stirring constantly to avoid lumps.

Add Worcestershire sauce, thyme, salt, and pepper. Allow the gravy to simmer for several minutes until it thickens slightly.

The aroma at this stage should resemble a rich bowl of French onion soup.
