Fried Mac and Cheese Egg Rolls: Crispy, Cheesy Comfort Food in Every Bite
There are few comfort foods more satisfying than creamy macaroni and cheese, but Fried Mac and Cheese Egg Rolls take that familiar favorite and turn it into something completely different. Creamy, cheesy pasta is tucked inside crisp egg-roll wrappers and fried until golden brown, creating a delicious contrast between the crunchy outside and the rich, gooey center.
These egg rolls make a fun appetizer, party snack, or creative way to transform leftover macaroni and cheese into a completely new dish. Serve them with marinara sauce, ranch dressing, or a creamy dipping sauce for an irresistible finish.
Why You’ll Love These Fried Mac and Cheese Egg Rolls
The best part of this recipe is the texture. The wrappers become beautifully crisp while the macaroni and cheese inside stays soft, creamy, and cheesy.
They are also easy to customize. You can use homemade macaroni and cheese or leftover mac and cheese from the refrigerator. Add crispy bacon, diced cooked chicken, chopped jalapeños, or a little hot sauce if you want to change the flavor.
Ingredients
For the Mac and Cheese Filling
- 2 cups cooked elbow macaroni
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Salt and black pepper, to taste
For the Egg Rolls
- 10–12 egg-roll wrappers
- 1 tablespoon water, for sealing
- Vegetable oil, for frying
Optional Dipping Sauce
- Marinara sauce
- Ranch dressing
- Spicy cheese sauce
- Garlic aioli
Step-by-Step Method
1. Cook the Macaroni
Bring a pot of salted water to a boil and cook the elbow macaroni according to the package directions. Cook it just until tender, then drain thoroughly.
Allow the pasta to cool for several minutes. A slightly cooled filling is easier to work with and helps prevent the egg-roll wrappers from becoming too soft.
2. Make the Creamy Cheese Sauce
Melt the butter in a saucepan over medium heat. Sprinkle in the flour and whisk continuously for about 30–60 seconds to create a smooth roux.
Slowly pour in the milk while whisking. Continue stirring until the mixture begins to thicken.
Reduce the heat and add the cheddar and mozzarella a little at a time. Stir until the cheese melts into a smooth, creamy sauce.
Season with garlic powder, onion powder, salt, and black pepper.
3. Combine the Pasta and Cheese Sauce
Add the cooked macaroni to the cheese sauce and gently stir until every piece of pasta is coated.
The mixture should be creamy but thick enough to hold its shape. If it seems too loose, allow it to cool for a few minutes. For easier rolling, refrigerating the mac and cheese until chilled can also help.
