Garlic Butter French Onion Roasted Baby Potatoes: A Savory Step-by-Step Recipe

Garlic Butter French Onion Roasted Baby Potatoes are a rich, golden, and flavorful side dish made with tender baby potatoes, melted butter, garlic, onion seasoning, herbs, and a crispy roasted finish. This recipe combines the cozy flavor of French onion soup with the comfort of roasted potatoes, creating a dish that is simple to prepare but full of deep savory taste.

The potatoes become soft and creamy on the inside while the outside turns golden, buttery, and slightly crisp. The French onion flavor gives the dish a warm, caramelized onion-style taste, while the garlic butter adds richness and aroma. It is perfect for serving with roasted chicken, steak, grilled meat, burgers, fish, or even as a snack with dipping sauce.

Why This Recipe Works

Baby potatoes are ideal for roasting because they have thin skins, a naturally creamy center, and a mild flavor that absorbs seasoning well. When they are coated in garlic butter and French onion seasoning, they roast into small golden bites with a rich, savory crust.

The key to this recipe is roasting at a high temperature. This helps the potatoes brown on the outside without drying out inside. Adding butter gives flavor, while a little olive oil helps prevent burning and encourages crispiness.

Ingredients

Main Ingredients

  • 1 ½ pounds baby potatoes, halved
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 packet French onion soup mix
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried parsley
  • ¼ teaspoon dried thyme, optional
  • ¼ cup grated parmesan cheese, optional
  • Fresh parsley for garnish

Optional Additions

  • ½ cup shredded mozzarella or Gruyère cheese
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon chili flakes
  • 1 small onion, thinly sliced
  • Sour cream or garlic aioli for dipping

Step 1: Choose and Prepare the Potatoes

Start with fresh baby potatoes. Red, yellow, or mixed baby potatoes all work well. Yellow baby potatoes give a buttery texture, while red potatoes hold their shape nicely after roasting.

Wash the potatoes thoroughly under cold water to remove any dirt. Since the skins are thin and flavorful, there is no need to peel them.

After washing, dry the potatoes very well with a clean towel. This is important because wet potatoes will steam instead of roast, and they will not become as crispy.

Cut each baby potato in half. If some potatoes are larger, cut them into quarters so all pieces are similar in size.

Step 2: Preheat the Oven

Preheat your oven to 425°F / 220°C.

A hot oven helps the potatoes develop a golden roasted surface. If the oven is too low, the potatoes may become soft but not crispy.

Line a baking sheet with parchment paper or lightly grease it with oil. A large baking sheet is best because the potatoes need space to roast properly.

Step 3: Make the Garlic Butter Mixture

In a large mixing bowl, combine the melted butter, olive oil, minced garlic, French onion soup mix, black pepper, paprika, parsley, and thyme if using.

Stir everything together until well mixed.

The butter adds richness, the garlic gives a strong savory aroma, and the French onion soup mix brings onion flavor, saltiness, and depth. Because the soup mix is usually salty, you usually do not need to add extra salt.

Step 4: Coat the Potatoes

Add the halved baby potatoes to the bowl with the garlic butter mixture.

Toss the potatoes until every piece is fully coated. Make sure the seasoning reaches the cut sides as well as the skins.

For the best flavor, let the coated potatoes sit for 10 minutes before roasting. This gives the seasoning a little time to cling to the potatoes.

If you want extra flavor, add a spoon of Worcestershire sauce at this stage. It gives the potatoes a deeper French onion-style taste.
