Glazed Coconut Fritters: A Golden, Crispy, Coconut-Filled Treat

There is something wonderfully comforting about freshly fried fritters: crisp edges, a tender center, and that irresistible aroma that fills the kitchen. Glazed Coconut Fritters take that classic idea and give it a tropical twist. Shredded coconut adds a delicate chewiness and rich flavor to the dough, while a simple sweet glaze creates a smooth finish that sets beautifully over the warm fritters.

These fritters are easy enough for a relaxed weekend breakfast but special enough to serve as a dessert or afternoon treat. The secret is in creating a soft dough without overmixing, frying the fritters at the right temperature, and glazing them while they are still slightly warm.

What Are Glazed Coconut Fritters?

Glazed Coconut Fritters are small pieces of sweet coconut-enriched dough that are fried until golden brown and then coated with a light vanilla glaze. Unlike a yeast-raised doughnut, these fritters can be made without waiting for dough to rise, making them a convenient option when you want something homemade without a long preparation time.

The coconut provides texture throughout the fritter, while the glaze adds sweetness and a delicate vanilla finish. For extra flavor, you can also add a little coconut extract, lime zest, or toasted coconut.

Ingredients You’ll Need

For the Coconut Fritters

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup sweetened shredded coconut
  • 1 large egg
  • ¾ cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • Vegetable oil, for frying

For the Glaze

  • 1½ cups powdered sugar
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract
  • ¼ teaspoon coconut extract, optional
  • Pinch of salt

Optional Garnish

  • Toasted shredded coconut
  • Finely grated lime zest
  • A light dusting of powdered sugar

Step-by-Step Method

Step 1: Prepare the Coconut

Before mixing the dough, measure out the shredded coconut. If you want a deeper coconut flavor, lightly toast about half of it in a dry skillet over medium-low heat.

Stir frequently and remove it from the heat as soon as it becomes lightly golden. Let it cool before adding it to the dough.

This small extra step gives the fritters a richer, nuttier coconut flavor.

Step 2: Combine the Dry Ingredients

In a large mixing bowl, whisk together:

  • Flour
  • Sugar
  • Baking powder
  • Salt
  • Cinnamon

Add the shredded coconut and stir until it is evenly distributed.

Mixing the coconut into the dry ingredients first helps prevent it from forming large clumps in the finished fritters.

Step 3: Mix the Wet Ingredients

In a separate bowl, whisk the egg, milk, vanilla extract, and melted butter until smooth.

Make sure the melted butter has cooled slightly before combining it with the egg so that the egg doesn’t begin to cook.

If you’re using coconut extract, you can add a small amount here as well.

Step 4: Make the Batter

Pour the wet ingredients into the bowl containing the dry ingredients.

Using a wooden spoon or rubber spatula, gently stir everything together until a thick, soft dough forms.

Do not overmix. A few small streaks of flour are preferable to stirring the dough until it becomes completely smooth.

The finished mixture should be soft and slightly sticky, but firm enough to scoop.

If the dough seems too wet

Add flour one tablespoon at a time until it becomes manageable.

If it seems too dry

Add a small splash of milk and gently mix again.

The amount of flour needed can vary depending on the humidity and how the flour is measured.
