Golden Ham and Cheese Soufflé Pie: A Buttery Crust Wrapped Around a Creamy, Cheesy Dream

There is something wonderfully comforting about a dish that combines the elegance of a soufflé with the heartiness of a homemade pie. This golden ham and cheese soufflé pie features a delicate, puffed, buttery crust that rises beautifully in the oven, creating a crisp and flaky shell around a rich, creamy filling.

Inside the golden crust is a cloud-like soufflé-style mixture made with melted cheese, creamy sauce, fluffy eggs, and generous pieces of diced ham. Every bite delivers a perfect balance of textures: the crisp crackle of the pastry, the smooth and cheesy center, and the savory flavor of ham tucked throughout.

This dish is ideal for a cozy family breakfast, a weekend brunch, or a comforting dinner when you want something impressive but easy enough to prepare at home.

Ingredients

For the Buttery Crust

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • 4–5 tablespoons ice water
  • 1 egg yolk mixed with 1 tablespoon milk (for brushing)

For the Creamy Ham and Cheese Soufflé Filling

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk, warmed
  • ½ cup heavy cream
  • 1 cup shredded cheese (cheddar, Gruyère, Swiss, or a combination)
  • 1 cup diced cooked ham
  • 4 large eggs, separated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley or chives (optional)
  • Pinch of nutmeg (optional, for a deeper flavor)

Step-by-Step Method

Step 1: Prepare the Buttery Crust

Begin by making the pastry base. In a large bowl, combine the flour and salt. Add the cold butter pieces and use your fingertips or a pastry cutter to blend the butter into the flour until the mixture resembles coarse crumbs.

The secret to a flaky crust is keeping the butter cold. Small pieces of butter create pockets of steam while baking, giving the crust its beautiful golden layers.

Gradually add the ice water, one tablespoon at a time, mixing gently until the dough comes together. Avoid overmixing because this can make the crust tough.

Shape the dough into a disk, wrap it, and refrigerate for at least 30 minutes.

Step 2: Prepare the Creamy Cheese Sauce

While the dough chills, prepare the filling.

Melt the butter in a saucepan over medium heat. Add the flour and whisk continuously for about one minute to create a smooth roux.

Slowly pour in the warm milk while whisking to prevent lumps from forming. Continue cooking until the sauce thickens into a creamy consistency.

Add the heavy cream, shredded cheese, salt, pepper, garlic powder, and nutmeg. Stir until the cheese melts completely and the sauce becomes smooth and rich.

Remove from heat and allow it to cool slightly.
