Step-by-Step Method

Step 1: Prepare the Beef

Pat the beef pieces dry with paper towels. This small step helps the meat brown instead of simply steaming in the pot.

Season the beef lightly with salt, black pepper, and smoked paprika if using.

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Once the oil is hot, add the beef in batches.
