Step 1: Prepare the Butter

Place the butter in the refrigerator or freezer for a few minutes to make sure it is very cold.

Cold butter is important because it slowly melts while cooking instead of disappearing immediately into the meat.

Cut the butter into small cubes or grate it using a box grater.
