Why Make Egg Rolls at Home?
Homemade egg rolls offer several advantages over takeout versions:
- Fresher ingredients
- Better flavor control
- Customizable fillings
- Crispy texture straight from cooking
- No unnecessary preservatives
Once you learn the basic technique, you can easily create different variations using chicken, pork, shrimp, or vegetarian ingredients.
Ingredients
For the Filling
- 1 pound ground pork
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup bean sprouts
- 3 green onions, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- ½ teaspoon white pepper
- 1 tablespoon vegetable oil
For Wrapping
- 15–20 egg roll wrappers
- 1 beaten egg (for sealing)
For Frying
- Vegetable oil or peanut oil
Equipment Needed
- Large skillet or wok
- Mixing spoon
- Deep frying pan or pot
- Paper towels
- Small bowl for egg wash
Step 1: Prepare the Vegetables
Wash and dry all vegetables thoroughly.
Shred the cabbage into thin strips and grate the carrots. Slice the green onions and prepare the garlic and ginger.
The vegetables should be cut into small, thin pieces to ensure the filling cooks evenly and fits comfortably inside the wrappers.
Step 2: Cook the Pork
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
Add the ground pork and cook until browned and fully cooked, breaking it apart into small crumbles as it cooks.
Drain any excess grease if necessary.
Step 3: Add Aromatics
Stir in the minced garlic and grated ginger.
Cook for about 30 seconds until fragrant. This step adds depth and authentic flavor to the filling.
Step 4: Cook the Vegetables
Add the shredded cabbage, carrots, bean sprouts, and green onions to the skillet.
Cook for 4–5 minutes, stirring frequently. The vegetables should soften slightly while still retaining some texture.
Avoid overcooking, as the filling will continue to cook during frying.
