Italian Sausage and Pepper Pasta Skillet: A Hearty One-Pan Dinner Recipe

Italian Sausage and Pepper Pasta Skillet is a warm, flavorful, and satisfying meal made with juicy Italian sausage, sweet bell peppers, onions, garlic, pasta, tomato sauce, herbs, and melted cheese. It is inspired by the classic combination of Italian sausage and peppers, but it turns that familiar flavor into a complete pasta dinner.

This dish is perfect for busy weeknights because everything comes together in one large skillet. The sausage adds rich, savory flavor, the peppers bring sweetness and color, and the pasta absorbs the sauce as it cooks, making every bite hearty and delicious.

Why This Recipe Works

The beauty of this pasta skillet is that it builds flavor in layers. First, the sausage is browned until golden. Then the onions and peppers cook in the same pan, soaking up the sausage flavor. Garlic, tomatoes, broth, and seasonings create a rich sauce, and the pasta cooks directly in that sauce so it becomes flavorful from the inside out.

The result is a comforting pasta dish with the taste of a slow-cooked Italian meal, but with much less effort.

Ingredients

Main Ingredients

  • 1 pound Italian sausage, mild or spicy
  • 2 tablespoons olive oil, if needed
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 4 cloves garlic, minced
  • 12 ounces pasta, such as penne, rotini, rigatoni, or bow-tie pasta
  • 1 can crushed tomatoes, 14 to 15 ounces
  • 2 tablespoons tomato paste
  • 2 ½ cups chicken broth or vegetable broth
  • ½ cup heavy cream, optional for a creamy version
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes, optional
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • Fresh parsley or basil for garnish

Step 1: Prepare the Ingredients

Before cooking, slice the bell peppers and onion into thin strips. Mince the garlic and measure out the pasta, broth, tomatoes, and seasonings.

If you are using sausage links, remove the sausage from the casing or slice the links into rounds. If you are using loose ground Italian sausage, it can go straight into the pan.

Having everything ready before you start makes the cooking process smoother because this recipe moves quickly once the skillet is hot.

Step 2: Brown the Italian Sausage

Place a large deep skillet or sauté pan over medium-high heat.

Add the Italian sausage to the pan. If the sausage is very lean, add a little olive oil. Break the sausage into small pieces with a spoon as it cooks.

Cook for about 6 to 8 minutes, or until the sausage is browned and fully cooked. Browning is important because it gives the dish a deeper, richer flavor.

Once cooked, transfer the sausage to a plate and set it aside. Leave a small amount of the sausage drippings in the pan because they will flavor the vegetables.

Step 3: Cook the Peppers and Onion

In the same skillet, add the sliced onion and bell peppers.

Cook for 5 to 7 minutes, stirring occasionally, until the vegetables soften and begin to brown around the edges.

The peppers should become tender but not mushy. Their sweetness balances the richness of the sausage and gives the skillet a colorful, fresh flavor.

If the pan looks dry, add a small drizzle of olive oil.

Step 4: Add Garlic and Tomato Paste

Add the minced garlic to the skillet and stir for about 30 seconds.

Next, add the tomato paste. Stir it into the peppers and onions and let it cook for 1 minute.

Cooking the tomato paste briefly helps remove its raw taste and makes the sauce richer. It also gives the dish a deeper red color and stronger tomato flavor.
