Ingredients
For the Casserole
- 4 cups cooked chicken, shredded or diced
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- 1½ cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4–6 jalapeños, diced
- 8 slices bacon, cooked and crumbled
For the Topping
- ½ cup shredded cheddar cheese
- ¼ cup crumbled bacon
- 2 tablespoons sliced jalapeños
- ¼ cup crushed pork rinds or breadcrumbs (optional)
Step 1: Prepare the Ingredients
Preheat your oven to 375°F (190°C).
Cook and shred the chicken if it isn’t already prepared. Rotisserie chicken works especially well because it saves time and adds flavor.
Cook the bacon until crispy, then transfer it to paper towels to drain excess grease. Once cooled, crumble it into small pieces.
Wash and dice the jalapeños. For a milder casserole, remove the seeds and membranes before chopping. If you enjoy extra heat, leave some seeds intact.
Grease a 9×13-inch baking dish with cooking spray or a light coating of butter.
Step 2: Make the Creamy Base
In a large mixing bowl, combine:
- Softened cream cheese
- Sour cream
- Garlic powder
- Onion powder
- Black pepper
Mix until smooth and creamy. The softened cream cheese should blend easily with the sour cream, creating a rich and flavorful sauce.
Step 3: Add the Main Ingredients
Fold the cooked chicken into the cream cheese mixture.
Next, add:
- Shredded cheddar cheese
- Monterey Jack cheese
- Diced jalapeños
- Most of the crumbled bacon
Reserve a small amount of bacon and cheese for the topping.
Stir everything together until the chicken is thoroughly coated and all ingredients are evenly distributed.
