HOW TO MAKE LAZY DAY OATMEAL CAKE
The Lazy Daisy Oatmeal Cake has been around for a very long time and is considered to be a classic. I have been cooking this cake for many years since it is a favorite among my family members. During business occasions, as well as at family reunions and other get-togethers, I brought this cake. There has never been any that I have taken back with me. THE CAKE INGREDIENTS:
2 1/2 Cups.Of boiling water.
2 Cups.Of quick cooking oats.
1 Cup.Of margarine.
2 Cups.Of sugar.
2 Cups.Of brown sugar.
2 Tsp.Of vanilla extract.
4 large beaten eggs.
3 Cups.Of all-purpose flour.
2 Tsp.Of soda.
1 Tsp.Of salt.
1 1/2 Tsp.Of cinnamon powder.
1/2 Tsp.Of nutmeg.
THE FROSTING INGREDIENTS:
1 Cup.Of melted margarine.
2 Cups.Of brown sugar.
6 Tbsp.Of half and half.
1 Cup.Of chopped walnuts or pecans.
3 Cups.Of shredded coconut.
PREPARATION:
1st Step
Cover the oats with boiling water and let them sit for 20 minutes.
2nd Step
Cream the butter, then gradually add the sugars, beating after each addition. Mix in the egg and vanilla extract. Blend in the oat mixture well.
3rd Step
Put in some flour, baking powder, salt, spices, and nutmeg. Toss everything together. Bake for 1 hour at 350 degrees in a greased 9-by-13-inch cake pan. Set aside to cool.
4th Step
For making the frosting; you need to combine everything in a bowl and spread it on the cake. To make the icing on the cake bubble, broil it in the oven. You can serve the cake either warm or chilled.
