Loaded Cheesy Pocket Tacos
Loaded Cheesy Pocket Tacos are a fun, comforting twist on traditional tacos. Instead of the classic open taco shell, these tacos are folded into warm, golden pockets filled with seasoned meat, melted cheese, and flavorful toppings. They are perfect for busy weeknights, family dinners, or casual gatherings with friends. The crispy exterior paired with the gooey cheese and savory filling makes every bite satisfying and delicious.
One of the best things about this recipe is how customizable it is. You can adjust the fillings, spices, and toppings to suit your taste. Whether you like them spicy, extra cheesy, or loaded with vegetables, these pocket tacos are incredibly easy to personalize.
Ingredients
For the taco filling:
- 1 pound ground beef (or ground chicken or turkey)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade taco seasoning)
- ½ cup tomato sauce or salsa
- ½ teaspoon paprika
- ½ teaspoon cumin
- Salt and pepper to taste
For the pockets:
- 8 small flour tortillas
- 1 ½ cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup cooked black beans (optional)
- ½ cup corn kernels (optional)
For topping or serving:
- Shredded lettuce
- Diced tomatoes
- Sour cream
- Guacamole
- Fresh cilantro
- Jalapeño slices (optional)
Step-by-Step Method
Step 1: Prepare the taco filling
Heat a large skillet over medium heat and add the olive oil. Once the oil is warm, add the chopped onion and cook for about 2–3 minutes until it becomes soft and slightly translucent.
Add the minced garlic and cook for another 30 seconds, stirring constantly so it does not burn.
Next, add the ground beef to the skillet. Break it apart with a spatula and cook for about 5–7 minutes until it is fully browned.
