Low-Carb Foil Pack Pizza Bowls
When you want the comforting flavors of pizza without the heavy crust and extra carbohydrates, these Low-Carb Foil Pack Pizza Bowls are a simple and satisfying alternative. Everything you love about pizza—savory meat, melted cheese, tangy pizza sauce, and flavorful toppings—is layered together inside individual foil packets and baked until hot, bubbly, and delicious.
These pizza bowls are especially convenient for busy weeknights because they require minimal preparation and very little cleanup. The foil packets keep the ingredients together while they cook, allowing the cheese to melt beautifully over the toppings and the flavors to blend into every bite.
Why You’ll Love These Low-Carb Pizza Bowls
This recipe is easy to customize according to your favorite pizza combinations. You can use ground beef, Italian sausage, pepperoni, chicken, or a mixture of meats. Add mushrooms, bell peppers, onions, olives, or spinach for extra flavor and texture.
Unlike traditional pizza, there is no dough to prepare, roll, or bake. Instead, the ingredients are arranged in a bowl-like packet and cooked until the cheese is melted and everything is heated through.
They are also perfect for portioning because each person can have their own foil packet with the toppings they enjoy most.
Ingredients
For approximately 4 servings, you will need:
- 1 pound ground beef or Italian sausage
- 1 cup low-sugar or no-sugar-added pizza sauce
- 2 cups shredded mozzarella cheese
- ½ cup sliced pepperoni
- ½ small onion, finely chopped
- ½ cup sliced mushrooms
- ½ cup chopped bell pepper
- ¼ cup sliced black olives, optional
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon crushed red pepper flakes, optional
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- ¼ cup grated Parmesan cheese
- Fresh basil or parsley, for serving, optional
You can adjust the vegetables and toppings depending on your preferred pizza flavors.
Step 1: Prepare the Ingredients
Begin by preheating your oven to 400°F (200°C).
Chop the onion and bell pepper into small pieces and slice the mushrooms if they are not already prepared. Keeping the vegetables relatively small helps them cook evenly inside the foil packets.
If you are using larger pieces of pepperoni, you can cut them into smaller pieces as well.
Step 2: Cook the Meat
Heat a large skillet over medium heat and add the olive oil.
Add the ground beef or Italian sausage and cook for approximately 6–8 minutes, breaking it apart with a spatula as it cooks.
Continue cooking until the meat is browned and fully cooked.
Drain excess grease if necessary. This is particularly useful when using regular ground beef or sausage because it prevents the foil packets from becoming overly greasy.
Season the cooked meat with Italian seasoning, garlic powder, onion powder, salt, black pepper, and crushed red pepper flakes if you want a little heat.
Stir everything together and cook for another minute so the seasonings can become fragrant.
Step 3: Prepare the Foil Packets
Tear off four large pieces of heavy-duty aluminum foil.
For extra protection against leaks, you can place two sheets of foil together for each serving.
Lightly brush the center of each piece of foil with a little olive oil.
Begin forming the ingredients in the center, leaving enough space around the edges to fold the foil over the top.
Step 4: Add the Meat and Vegetables
Divide the cooked meat evenly among the four foil pieces.
Spread the meat into a shallow mound rather than making it too thick. This helps the toppings heat evenly.
Add the chopped onions, bell peppers, mushrooms, and black olives if using them.
You can also add other low-carb pizza toppings such as:
- Jalapeños
- Spinach
- Diced tomatoes
- Cooked bacon
- Chicken
- Zucchini
- Sliced olives
Avoid adding too many watery vegetables at once, as they can release liquid during cooking.
Step 5: Add the Pizza Sauce
Spoon the pizza sauce over the meat and vegetables.
You do not need to completely cover everything with sauce. A few spoonfuls distributed across each packet are enough to provide that classic pizza flavor.
For a lower-carb option, choose a pizza or marinara sauce with little or no added sugar and check the carbohydrate content on the label.
Step 6: Add the Cheese and Pepperoni
Sprinkle a generous layer of shredded mozzarella over each portion.
Add the pepperoni on top of the cheese.
Finish with a small sprinkle of Parmesan for an extra savory flavor.
If you love extra cheese, you can add a little more mozzarella, but keep in mind that additional cheese will increase the calorie content of the dish.
