- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon oil

- ½ cup tomato sauce
- ½ cup canned diced tomatoes
- ½ cup kidney beans or black beans, drained
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
- Salt to taste
- ¼ teaspoon cayenne pepper, optional
- 2 tablespoons water or beef broth, if needed

Step 1: Prepare the Tortilla Cups
Preheat your oven to 375°F / 190°C.
Lightly grease a muffin tin with cooking spray or melted butter.
Cut the tortillas into smaller circles or squares, depending on the size of your muffin tin. If using small tortillas, you can cut each one into 2 or 3 pieces. Press each piece gently into the muffin cups to form a bowl shape.
The tortilla edges may fold slightly, and that is fine. Those folds will become crispy and golden when baked.
Lightly spray the tortilla cups with cooking spray. This helps them crisp up in the oven.
Step 2: Bake the Empty Cups First
Place the muffin tin in the oven and bake the tortilla cups for 5 to 7 minutes.
They should become slightly firm but not fully browned yet. This first bake helps the cups hold their shape before the chili filling is added.
Remove the muffin tin from the oven and set it aside.
Step 3: Cook the Ground Beef
Heat oil in a skillet over medium heat.
Add the diced onion and cook for 2 to 3 minutes until soft. Add the minced garlic and stir for about 30 seconds.
Add the ground beef. Break it apart with a spoon and cook until browned.
Once the beef is fully cooked, drain any excess grease. This is important because too much grease can make the taco cups soggy.
