Mom’s Flat Apple Pie: Rustic, Simple, and Bursting with Flavor

When it comes to nostalgic desserts, few can rival the warm, comforting charm of Mom’s Flat Apple Pie. Unlike the traditional deep-dish pie, this rustic variation is freeform and baked directly on a sheet pan or baking stone. It’s thinner, crispier, and lets the caramelized apple filling shine through every bite. This simple but genius take on the classic apple pie is perfect for busy bakers, casual gatherings, or just cozy evenings at home.

Why Flat Apple Pie?

  • Less fuss, more flavor: No need for pie dishes or complicated crimping.
  • Perfect crust-to-filling ratio: Thinner means crispier edges and just enough juicy filling.
  • Rustic appeal: Its imperfect look is part of its charm.
  • Easy to customize: Add nuts, spices, or even caramel for a unique twist.

Ingredients

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar (optional, for a slightly sweet crust)
  • 1/2 cup (1 stick) unsalted butter, cold and cut into cubes
  • 3 to 5 tablespoons ice water

For the filling:

  • 3–4 medium apples (Granny Smith, Honeycrisp, or a mix), peeled and thinly sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon flour (to absorb juices)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)

Optional toppings:

  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)
  • A drizzle of caramel or powdered sugar glaze

Step-by-Step Instructions

Step 1: Make the Crust

  1. In a large bowl, mix the flour, salt, and sugar.
  2. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Add the ice water, one tablespoon at a time, mixing gently until the dough begins to come together.
  4. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Prepare the Apple Filling

  1. In a large bowl, combine the thinly sliced apples with both sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla (if using).
  2. Toss well to coat all the slices evenly.
  3. Let sit for 10–15 minutes so the flavors meld and juices start to release.
