This meal combines juicy, pan-seared chicken in a creamy garlic herb sauce with golden roasted potatoes and crisp-tender green beans tossed in butter. It’s comfort food with a touch of elegance — perfect for family dinners, date nights, or when you simply want to spoil yourself a little.


🛒 Ingredients

For the Chicken and Sauce:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried Italian herbs (or a mix of basil, oregano, and thyme)
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)

For the Roasted Potatoes:

  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste

For the Buttered Green Beans:

  • 1 pound fresh green beans, trimmed
  • 1 tablespoon butter
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

🧑‍🍳 Step-by-Step Method

Step 1: Roast the Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved potatoes with olive oil, smoked paprika, salt, and pepper until evenly coated.
  3. Spread them on a baking sheet in a single layer.
  4. Roast for 25–30 minutes, flipping halfway through, until golden and crispy on the outside but tender inside.

Tip: If you like extra crunch, broil them for the last 3 minutes!


Step 2: Prepare the Chicken

  1. Pat the chicken breasts dry with paper towels — this helps them sear beautifully.
  2. Season both sides generously with salt and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
