No-Bake Chocolate Caramel Slice: A Rich Layered Dessert Made Step by Step
No-Bake Chocolate Caramel Slice is a sweet, rich, and satisfying dessert made with three delicious layers: a buttery biscuit base, a smooth caramel filling, and a glossy chocolate topping. It has the flavor of a classic bakery caramel slice, but it does not require an oven, which makes it easier and more convenient for home preparation.
This dessert is perfect for parties, family gatherings, afternoon tea, lunch boxes, holidays, or whenever you want a make-ahead treat. Each bite has a crunchy base, a soft caramel center, and a firm chocolate top. The best part is that the refrigerator does most of the work.
What Makes This Slice Special?
The beauty of a no-bake chocolate caramel slice is the contrast between the layers. The biscuit base gives structure and crunch. The caramel layer adds sweetness, creaminess, and a soft chewy texture. The chocolate topping balances everything with a smooth, rich finish.
Unlike baked caramel slices, this version is simpler because you do not need to bake the crust or cook the caramel for a long time. You only need to prepare each layer, chill it properly, and slice it once it is firm.
Ingredients
For the Biscuit Base
- 2 ½ cups crushed digestive biscuits, graham crackers, or shortbread biscuits
- ½ cup melted butter
- 2 tablespoons cocoa powder, optional
- 2 tablespoons brown sugar
- ¼ teaspoon salt
For the Caramel Layer
- 1 can sweetened condensed milk, about 395 g
- ½ cup brown sugar
- ½ cup butter
- 2 tablespoons golden syrup, corn syrup, or honey
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
For the Chocolate Topping
- 1 ½ cups milk chocolate or semi-sweet chocolate chips
- 2 tablespoons butter or coconut oil
- ¼ teaspoon salt, optional
Step 1: Prepare the Pan
Choose an 8×8 inch or 9×9 inch square pan. Line it with parchment paper, leaving some paper hanging over the sides. This will help you lift the slice out easily after it sets.
Lightly grease the parchment paper with butter or cooking spray. This is useful because caramel can be sticky, and the chocolate layer can firm up strongly after chilling.
Step 2: Crush the Biscuits
Place the biscuits in a food processor and pulse until they turn into fine crumbs. If you do not have a food processor, place the biscuits in a sealed plastic bag and crush them with a rolling pin.
The crumbs should be mostly fine, but a few small pieces are okay. They add texture to the base.
Transfer the crumbs to a mixing bowl.
Step 3: Make the Biscuit Base
Add brown sugar, salt, and cocoa powder to the biscuit crumbs. The cocoa powder is optional, but it gives the base a deeper chocolate flavor.
Pour in the melted butter and mix until the crumbs look like wet sand.
The mixture should hold together when pressed between your fingers. If it feels too dry, add one more tablespoon of melted butter.
Step 4: Press the Base into the Pan
Pour the crumb mixture into the prepared pan.
Press it down firmly using the back of a spoon, a spatula, or the bottom of a glass. Make sure the base is even and tightly packed.
This step is important. A loose base will crumble when sliced, while a firm base will hold the caramel and chocolate layers properly.
Place the pan in the refrigerator for 20 to 30 minutes while you prepare the caramel.
