Ingredients
- 1 cup (226 g) unsalted butter, softened
- 1/2 cup (60 g) powdered sugar, plus extra for coating
- 1 teaspoon pure vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 cup (110 g) finely chopped pecans
- 1/4 teaspoon salt
Step-by-Step Method
1. Prepare the oven and baking sheet
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
This prevents the delicate cookies from sticking and makes cleanup much easier.
2. Cream the butter and powdered sugar
Place the softened butter and 1/2 cup powdered sugar in a large mixing bowl. Beat them together for about 2–3 minutes, until the mixture becomes smooth and creamy.
Avoid using melted butter. Softened butter gives the cookies the right structure and helps them hold their round shape during baking.
3. Add the vanilla
