Roast Beef Sliders: A Warm, Cheesy, Savory Party Sandwich Recipe
Roast Beef Sliders are small, buttery sandwiches filled with tender roast beef, melted cheese, and a flavorful sauce, then baked until golden, warm, and irresistible. They are perfect for parties, game nights, family dinners, lunch gatherings, or anytime you want something easy but satisfying.
These sliders are simple to prepare, but they taste rich and restaurant-style. The soft rolls absorb the buttery topping, the roast beef becomes warm and juicy, and the cheese melts into every layer. Each bite is savory, cheesy, slightly sweet from the rolls, and full of comfort-food flavor.
What Makes Roast Beef Sliders Special?
The best part of roast beef sliders is the combination of textures and flavors. The bread is soft inside but golden on top. The roast beef is tender and hearty. The cheese adds creaminess, while the buttery seasoning on top gives the sliders a rich, savory finish.
They are also very convenient because you can make many at once in one baking dish. Instead of building individual sandwiches one by one, you slice the rolls as a sheet, layer everything inside, brush the top with butter, and bake.
Ingredients
For the Sliders
- 12 soft slider rolls or Hawaiian rolls
- ¾ to 1 pound thinly sliced roast beef
- 8 to 10 slices provolone cheese, Swiss cheese, cheddar, or mozzarella
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard or yellow mustard
- 1 tablespoon horseradish sauce, optional
- ½ cup caramelized onions, optional
- ¼ cup pickles or banana peppers, optional
For the Butter Topping
- 4 tablespoons melted butter
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- 1 teaspoon sesame seeds or poppy seeds, optional
Step 1: Prepare the Baking Dish
Preheat the oven to 350°F / 175°C.
Lightly grease a baking dish with butter or non-stick spray. A 9×13 inch baking dish usually works well for 12 slider rolls.
Keep the rolls connected as one block. Do not separate them individually yet. This makes layering easier and keeps the sliders neat.
Step 2: Slice the Rolls
Using a sharp bread knife, slice the entire block of rolls horizontally.
You should have one large top piece and one large bottom piece.
Place the bottom half of the rolls into the prepared baking dish. Keep the top half aside for later.
Try not to cut the rolls unevenly. A straight cut helps the sliders bake evenly and hold together better.
Step 3: Make the Creamy Spread
In a small bowl, mix the mayonnaise, mustard, and horseradish sauce if using.
The mayonnaise adds moisture, the mustard gives a sharp savory flavor, and horseradish adds a little heat that pairs very well with roast beef.
Spread this mixture evenly over the bottom layer of the rolls.
Do not add too much sauce, because the bread can become soggy. A thin, even layer is enough.
Step 4: Add the Cheese Layer
Place half of the cheese slices over the bottom rolls.
This first cheese layer acts like a barrier between the bread and roast beef, helping prevent the bottom rolls from becoming too wet.
Provolone is one of the best choices because it melts smoothly and has a mild flavor. Swiss cheese gives a sharper taste, while cheddar makes the sliders richer.
Step 5: Add the Roast Beef
Layer the roast beef evenly over the cheese.
Fold or slightly overlap the slices so every slider gets a generous amount of meat.
Thinly sliced deli roast beef works best because it warms quickly and stays tender. If you are using leftover homemade roast beef, slice it as thin as possible.
For extra flavor, you can warm the roast beef briefly in a pan with a splash of beef broth before adding it to the rolls. This makes the meat even juicier.
