There are some dishes that instantly take us back to simpler times, evoking the comforting aromas of a home-cooked meal shared with family. Salisbury Steak is one of those timeless classics. Tender beef patties smothered in a rich onion and mushroom gravy — this dish has been a symbol of hearty American comfort food for generations. Whether served with creamy mashed potatoes or buttered noodles, Salisbury Steak is a meal that warms both the heart and the stomach.

Below is a detailed, step-by-step guide to making the perfect Salisbury Steak right in your own kitchen.


Ingredients

For the Salisbury Steaks:

  • 1 lb (450 g) ground beef (preferably 80/20 blend)
  • 1/3 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional for extra flavor)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil or butter (for frying)

For the Onion-Mushroom Gravy:

  • 2 tablespoons butter
  • 1 small onion, thinly sliced
  • 1 cup sliced mushrooms (white or cremini)
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Step 1: Prepare the Beef Mixture

In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, egg, ketchup, Worcestershire sauce, mustard (if using), garlic powder, salt, and pepper.
Using clean hands or a spoon, gently mix everything together until well combined. Be careful not to overmix — this can make the patties tough instead of tender.


Step 2: Shape the Patties

Divide the beef mixture into 4 to 5 equal portions and shape them into oval patties, about 3/4-inch thick. You can slightly indent the center of each patty with your thumb; this helps them cook evenly and prevents puffing up in the middle.


Step 3: Brown the Steaks

In a large skillet over medium-high heat, add olive oil or butter. Once hot, place the patties in the pan and sear each side for about 3–4 minutes, until they develop a nice brown crust.
They don’t need to be fully cooked at this stage — just browned on the outside. Remove the patties from the skillet and set them aside on a plate.


Step 4: Sauté Onions and Mushrooms

In the same skillet (without cleaning it — those browned bits are full of flavor), melt the butter. Add the sliced onions and mushrooms, and sauté for 5–6 minutes until softened and slightly caramelized. Stir occasionally to prevent burning.
