Sausage Cheddar Biscuit Breakfast Casserole: A Hearty Morning Bake

Sausage Cheddar Biscuit Breakfast Casserole is a warm, filling breakfast dish made with flaky biscuits, savory breakfast sausage, eggs, milk, and melted cheddar cheese. It is the kind of recipe that feels homemade, comforting, and satisfying without requiring complicated cooking skills.

This casserole is perfect for weekend mornings, family brunch, holiday breakfast, meal prep, or feeding a group. The biscuits bake into a soft, golden base, the sausage adds rich flavor, the eggs hold everything together, and the cheddar melts into every bite.

Why This Breakfast Casserole Works

This dish is special because it combines several breakfast favorites in one pan. Instead of making biscuits, eggs, sausage, and cheese separately, everything bakes together into one easy casserole.

The biscuits soak up some of the egg mixture while still keeping a fluffy texture. The sausage gives the casserole a savory, slightly spicy flavor, and the cheddar cheese creates a golden, creamy finish on top.

It is also a great make-ahead recipe. You can prepare it the night before and bake it in the morning.

Ingredients

Main Ingredients

  • 1 pound breakfast sausage
  • 1 can refrigerated biscuits, about 8 large biscuits
  • 6 large eggs
  • 1 ½ cups milk
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella or Monterey Jack cheese, optional
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • 1 tablespoon chopped parsley or green onions, optional

Optional Add-Ins

  • Diced bell peppers
  • Chopped onions
  • Cooked bacon bits
  • Mushrooms
  • Spinach
  • Jalapeños
  • Extra cheese
  • A small spoon of Dijon mustard for extra flavor

Step 1: Prepare the Baking Dish

Preheat your oven to 350°F / 175°C.

Grease a 9×13 inch baking dish with butter or cooking spray. This prevents the biscuits and eggs from sticking to the bottom of the pan.

A glass or ceramic baking dish works well because it helps the casserole cook evenly.

Step 2: Cook the Sausage

Place a skillet over medium heat and add the breakfast sausage.

Break the sausage into small pieces using a spoon or spatula. Cook until browned and fully cooked, usually about 7 to 9 minutes.

If the sausage releases too much grease, drain the excess fat. A little fat adds flavor, but too much can make the casserole heavy.

Once cooked, remove the sausage from the heat and set it aside.

Step 3: Cut the Biscuits

Open the can of refrigerated biscuits and separate them.

Cut each biscuit into 4 pieces. This helps the biscuits spread evenly throughout the casserole and bake properly.

Place the biscuit pieces in the greased baking dish. Spread them out so they cover the bottom of the dish.

Do not worry if there are small spaces between the biscuit pieces. They will puff up as they bake.

Step 4: Add the Sausage

Sprinkle the cooked sausage evenly over the biscuit pieces.

Try to distribute it well so every serving gets a good amount of sausage.

If you are adding onions, peppers, or mushrooms, you can mix them with the sausage before adding them to the dish.
