Sausage Cheddar Biscuit Breakfast Casserole Squares: A Hearty Make-Ahead Breakfast Recipe

Sausage Cheddar Biscuit Breakfast Casserole Squares are a warm, filling, and comforting breakfast dish made with flaky biscuit pieces, seasoned breakfast sausage, eggs, milk, and melted cheddar cheese. Once baked, the casserole becomes golden on top, soft and savory in the center, and easy to cut into neat squares.

This recipe is perfect for busy mornings, weekend brunch, holidays, potlucks, meal prep, or feeding a family without cooking everything separately. Instead of making biscuits, eggs, sausage, and cheese one by one, everything is layered into one baking dish and baked together until rich, fluffy, and satisfying.

Why This Breakfast Casserole Works

The best part of this casserole is the balance of texture and flavor. The biscuit pieces soak up some of the egg mixture, making the inside soft and tender, while the top becomes golden and slightly crisp. The sausage adds a savory, seasoned flavor, and the cheddar cheese melts throughout the dish, holding everything together.

When sliced into squares, each piece has a little bit of biscuit, egg, sausage, and cheese. It is simple, practical, and delicious.

Ingredients

Main Ingredients

  • 1 pound breakfast sausage
  • 1 can refrigerated biscuits, about 8 biscuits
  • 6 large eggs
  • 1 ½ cups whole milk
  • 1 cup heavy cream or half-and-half
  • 2 cups shredded cheddar cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 tablespoon chopped parsley or green onions, optional

Optional Add-Ins

  • ½ cup cooked bacon pieces
  • ½ cup diced bell peppers
  • ½ cup sautéed onions
  • ½ cup mushrooms
  • ¼ cup jalapeños
  • ½ cup mozzarella or pepper jack cheese
  • A pinch of red pepper flakes

Step 1: Prepare the Baking Dish

Preheat the oven to 350°F / 175°C.

Grease a 9×13 inch baking dish with butter or non-stick cooking spray. Make sure to coat the bottom and sides well so the casserole does not stick after baking.

A 9×13 inch dish gives the casserole enough room to bake evenly and makes it easier to cut into breakfast squares.

Step 2: Cook the Sausage

Place a skillet over medium heat and add the breakfast sausage.

Break it apart with a spoon or spatula as it cooks. Continue cooking until the sausage is browned and no longer pink.

If the sausage releases too much grease, drain the excess fat. A little bit of fat adds flavor, but too much can make the casserole heavy or oily.

Once cooked, remove the sausage from the heat and let it cool slightly.

Step 3: Cut the Biscuits

Open the can of refrigerated biscuits and separate them.

Cut each biscuit into 4 or 6 smaller pieces. The smaller pieces will spread evenly through the casserole and absorb the egg mixture better.

Place the biscuit pieces in the prepared baking dish. Spread them out in an even layer.

The biscuits will rise as they bake, so do not worry if the layer looks uneven at first.
