  • ¾ to 1 cup chicken broth

  • ½ teaspoon poultry seasoning, optional
  • ¼ cup grated parmesan cheese, optional
  • 2 tablespoons fresh parsley, chopped

For the Gravy

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth or turkey broth
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • Salt to taste
  • 1 tablespoon heavy cream, optional

Step 1: Prepare the Bread Cubes

Start with dried bread cubes or a ready-made stuffing mix. If you are using fresh bread, cut it into small cubes and dry it in the oven at 300°F / 150°C for about 15 to 20 minutes.

The bread should feel dry but not burnt. Dry bread absorbs broth and sausage juices better, which helps the stuffing balls hold their shape.

Place the bread cubes in a large mixing bowl and set them aside.

Step 2: Cook the Sausage

Place a large skillet over medium heat. Add the ground sausage and break it apart with a spoon.

Cook until the sausage is browned and no longer pink. This usually takes about 6 to 8 minutes.

Once cooked, remove the sausage from the pan and place it into the bowl with the bread cubes. Leave a little sausage fat in the skillet because it adds flavor to the vegetables.

Step 3: Sauté the Vegetables

In the same skillet, add the butter.

Add the diced onion and celery. Cook for 4 to 5 minutes until they become soft and fragrant.

Add the minced garlic and cook for another 30 seconds.

This step builds the base flavor. The onion adds sweetness, the celery adds freshness, and the garlic gives the stuffing balls a savory depth.
