Step 1: Prepare the Oven and Pan
Preheat your oven to 425°F / 220°C.
Line a large baking sheet with parchment paper or foil. This makes cleanup easier and helps prevent sticking.
Use a large sheet pan if possible. The ingredients need space to roast properly. If the pan is too crowded, the potatoes and onions will steam instead of becoming golden and crispy.
Step 2: Prepare the Potatoes
Wash the potatoes well and dry them with a towel.

If using raw Italian sausage, you can cut it into pieces, but it may be easier to roast the links whole first and slice them after cooking. Smoked sausage or kielbasa is usually already cooked, so it can be sliced before roasting.
Add the sliced sausage to the bowl.
