Sheet Pan Sausage and Potatoes: A Simple Step-by-Step One-Pan Dinner

Sheet Pan Sausage and Potatoes is an easy, hearty, and flavorful meal made with sliced sausage, tender potatoes, onions, peppers, and simple seasonings. Everything is roasted together on one baking tray until the potatoes become golden and crispy, the sausage is browned, and the vegetables turn soft and slightly caramelized.

This recipe is perfect for busy weeknights because it does not require complicated preparation. You only need to cut the ingredients, season them, spread them on a sheet pan, and let the oven do the work. It is filling, affordable, and easy to customize with different vegetables and sausage flavors.

Why This Recipe Works

The best part of this dish is the balance of texture and flavor. The potatoes become crispy on the outside and soft inside, while the sausage releases savory juices that season everything around it. The onions and peppers roast until sweet, and the herbs give the dish a warm homemade taste.

Because everything cooks on one pan, cleanup is also simple. It is a complete meal with protein, vegetables, and potatoes all in one dish.

Ingredients

Main Ingredients

  • 1 ½ pounds smoked sausage, kielbasa, chicken sausage, turkey sausage, or Italian sausage
  • 1 ½ pounds baby potatoes or regular potatoes
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried thyme or rosemary
  • ¼ teaspoon red pepper flakes, optional
  • 2 tablespoons chopped fresh parsley for garnish

Optional Add-Ins

  • Broccoli florets
  • Carrots
  • Zucchini
  • Mushrooms
  • Green beans
  • Brussels sprouts
  • Sweet potatoes
  • Parmesan cheese
  • Dijon mustard
  • Lemon juice

Step 1: Prepare the Oven and Pan

Preheat your oven to 425°F / 220°C.

Line a large sheet pan with parchment paper or foil. This helps prevent sticking and makes cleanup easier.

Use a large pan so the ingredients can spread out in a single layer. If the pan is too crowded, the sausage and potatoes will steam instead of roast, and they will not become as golden.

Step 2: Prepare the Potatoes

Wash the potatoes well and dry them with a towel.

If using baby potatoes, cut them in half. If using larger potatoes, cut them into small bite-sized pieces.

Try to keep the potato pieces close in size so they cook evenly. Smaller pieces roast faster and become crispier.

Place the potatoes in a large mixing bowl.

Step 3: Season the Potatoes First

Add olive oil, minced garlic, salt, black pepper, paprika, garlic powder, onion powder, Italian seasoning, and thyme or rosemary to the potatoes.

Toss well until every potato piece is coated with oil and seasoning.

Seasoning the potatoes first helps them absorb more flavor because they take longer to cook than the sausage and vegetables.

Step 4: Start Roasting the Potatoes

Spread the seasoned potatoes on the sheet pan in a single layer.

Place the pan in the oven and roast for 15 minutes.

This gives the potatoes a head start so they become tender inside and crispy outside. If you add the sausage too early, it may overcook before the potatoes are done.
