Slow Cooker Cabbage and Potatoes: A Simple, Hearty Comfort Food Recipe
Slow Cooker Cabbage and Potatoes is a warm, homestyle dish made with tender potatoes, soft cabbage, savory seasonings, and a rich buttery broth. It is one of those simple recipes that uses affordable ingredients but turns into a deeply comforting meal after slow cooking.
This dish is perfect as a side dish, but it can also become a full meal if you add smoked sausage, bacon, ham, or chicken. The slow cooker does most of the work, allowing the cabbage to soften beautifully while the potatoes absorb all the flavor from the broth, butter, garlic, onion, and seasonings.
Why This Recipe Works
Cabbage and potatoes are both simple ingredients, but they become delicious when cooked slowly. The potatoes turn soft and creamy, while the cabbage becomes tender and slightly sweet. The broth keeps everything moist, and the butter adds richness.
The slow cooker is especially useful because it cooks the vegetables gently. Instead of becoming dry or burned, the cabbage and potatoes slowly absorb flavor and become soft, savory, and comforting.
Ingredients
Main Ingredients
- 1 medium head of green cabbage
- 5 to 6 medium potatoes
- 1 medium onion, sliced or chopped
- 3 cloves garlic, minced
- 3 tablespoons butter, cut into pieces
- 1 ½ cups chicken broth or vegetable broth
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon dried thyme or Italian seasoning
- 1 tablespoon olive oil, optional
Optional Add-Ins
- 1 pound smoked sausage, sliced
- 5 slices cooked bacon, chopped
- 1 cup diced ham
- Red pepper flakes for heat
- Carrots for extra sweetness
- Fresh parsley for garnish
Step 1: Prepare the Cabbage
Start by removing the outer leaves from the cabbage if they look tough or damaged.
Cut the cabbage in half, then cut out the hard core from the center. Slice the cabbage into thick strips or large chunks.
Do not cut the cabbage too small. It will shrink as it cooks, so larger pieces hold their texture better in the slow cooker.
Rinse the cabbage well and drain it before adding it to the slow cooker.
Step 2: Prepare the Potatoes
Wash the potatoes thoroughly. You can peel them if you prefer a smoother texture, but leaving the skin on gives the dish a rustic flavor and helps the potatoes hold their shape.
Cut the potatoes into medium chunks. Try to keep the pieces similar in size so they cook evenly.
If the potato pieces are too small, they may break down too much during slow cooking. Medium chunks work best.
Step 3: Add the Onion and Garlic
Place the sliced onion and minced garlic at the bottom of the slow cooker.
This creates a flavorful base for the dish. As the onions cook, they become soft and slightly sweet, adding depth to the cabbage and potatoes.
If you want a stronger flavor, you can sauté the onion and garlic in a little butter before adding them to the slow cooker, but this step is optional.
Step 4: Layer the Potatoes
Add the potato chunks over the onion and garlic.
Potatoes take longer to cook than cabbage, so placing them closer to the bottom helps them cook more evenly.
Sprinkle part of the salt, black pepper, garlic powder, onion powder, smoked paprika, and thyme over the potatoes.
This allows the potatoes to absorb flavor as they cook.
Step 5: Add the Cabbage
Place the chopped cabbage on top of the potatoes.
At first, the slow cooker may look very full, but the cabbage will soften and shrink as it cooks.
Sprinkle the remaining seasonings over the cabbage.
Add the butter pieces on top so they melt slowly into the vegetables.
