Slow Cooker Cowboy Casserole

 

Instructions

1. Prep the Ingredients

  • Brown the ground beef:
    Heat a skillet over medium heat, cook the ground beef until browned, and drain any excess fat.

  • Prepare the potatoes:
    Chop into bite-sized pieces to ensure even cooking.


2. Layer the Ingredients in the Slow Cooker

  1. Place chopped potatoes on the bottom.

  2. Add the browned beef.

  3. Sprinkle in the kidney beans and corn.

  4. Pour tomato sauce over the top.

  5. Add garlic powder, onion powder, smoked paprika, salt, and pepper.

  6. Repeat layers if necessary so everything is evenly distributed.


3. Cook the Casserole

  • Low: 6–8 hours

  • High: 3–4 hours
    Cook until potatoes are tender.

Optional:
In the last 30 minutes, sprinkle shredded cheese on top and let it melt.


Serve With

  • Sour cream

  • Chives or green onions

  • Fresh parsley

  • Crusty bread or cornbread

  • Pickled jalapeños for extra kick


Tips & Variations

  • Add bacon for smoky depth.

  • Use pinto beans or black beans instead of kidney beans.

  • Swap ground turkey for a lighter version.

  • Add diced bell peppers for color and sweetness.

  • Top with crispy fried onions before serving for crunch.
