  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon caraway seeds (optional but recommended)
  • Salt to taste

For Garnishing

  • Extra shredded Swiss cheese
  • Chopped parsley
  • Crispy rye bread pieces or croutons
  • Extra chopped corned beef
  • Fresh black pepper

Step 1: Prepare the Ingredients

Before starting, prepare all the ingredients.

Cut the corned beef into small bite-sized pieces. Dice the potatoes into similar-sized cubes so they cook evenly.

Drain the sauerkraut well. Too much liquid from the sauerkraut can make the soup overly sour or watery.

Chop the onion and mince the garlic.

Preparing everything beforehand makes assembling the slow cooker much easier.


Step 2: Sauté the Onion and Garlic

Although you can add everything directly to the slow cooker, sautéing the onion and garlic first creates a deeper and richer flavor.

Heat a skillet over medium heat.

  • Potatoes
  • Sauerkraut
  • Chicken broth
  • Beef broth

Stir gently to combine everything.

The broth should cover most of the ingredients. If needed, add a little extra broth.


Step 4: Season the Soup

Add the seasonings:

  • Black pepper
  • Garlic powder
  • Onion powder
  • Paprika
  • Caraway seeds
  • Dijon mustard
  • Worcestershire sauce

Stir well.

The mustard and Worcestershire sauce add depth and help recreate the bold flavor of a Reuben sandwich.
