Ingredients (Basic Version)

This recipe is designed to be affordable and flexible:

  • 1 to 1.5 lbs ground beef (or ground turkey for a lighter option)
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced (optional but recommended)
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth (or water + bouillon)
  • 1 cup frozen peas or mixed vegetables
  • 1–2 teaspoons salt (to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon paprika (optional for depth of flavor)
  • 1 teaspoon dried thyme or Italian seasoning
  • 1 tablespoon Worcestershire sauce (optional but adds richness)

Step-by-Step Instructions

1. Brown the meat (important for flavor)

Start by heating a skillet over medium heat. Add the ground beef and cook until it is fully browned. Break it up as it cooks so there are no large chunks.

Once cooked, drain excess grease if needed. This step is optional but highly recommended because it gives the stew a deeper, richer flavor.


2. Prepare your vegetables

Peel and chop your potatoes into bite-sized cubes. Slice your carrots and chop the onion. Try to keep the pieces similar in size so everything cooks evenly in the slow cooker.

If you’re using garlic, mince it finely so it distributes well throughout the stew.


3. Load the slow cooker

Add the browned beef into the slow cooker first. Then layer in:

  • Potatoes
  • Carrots
  • Onion
  • Garlic

Pour the diced tomatoes over the top, followed by the beef broth. Stir gently to combine everything.

At this stage, the slow cooker will look quite full, but the ingredients will soften and reduce slightly as they cook.


4. Season the stew

Add salt, pepper, paprika, thyme (or Italian seasoning), and Worcestershire sauce. Stir lightly again so the seasonings begin to distribute through the liquid.
