Southern 4-Ingredient Cheese Straws
A timeless, buttery snack with a bold cheesy kick
Few Southern treats are as beloved and recognizable as cheese straws. Crisp, rich, and slightly spicy, these golden sticks are a staple at gatherings, holidays, and afternoon snack tables across the American South. What makes them even more appealing is their simplicity—just four ingredients come together to create something truly addictive.
This recipe keeps things classic and straightforward while delivering that signature melt-in-your-mouth texture with a satisfying crunch.
Ingredients (Only 4!)
- 1 cup (225g) unsalted butter, softened
- 2 cups (200g) sharp cheddar cheese, freshly grated
- 2 cups (250g) all-purpose flour
- ½ to 1 teaspoon cayenne pepper (adjust to taste)
Step-by-Step Method
1. Prepare Your Ingredients
Start by bringing your butter to room temperature—it should be soft enough to press easily but not melted. Freshly grate your cheddar cheese rather than using pre-shredded; this makes a noticeable difference in flavor and texture.
2. Cream the Butter and Cheese
In a large mixing bowl, combine the softened butter and grated cheddar cheese. Using a hand mixer or a wooden spoon, blend them together until the mixture becomes smooth and creamy. This step is essential—it ensures the cheese is evenly distributed and gives the straws their rich, cohesive texture.
3. Add the Dry Ingredients
Gradually add the flour to the butter-cheese mixture. Mix slowly to avoid flour flying everywhere. As the dough begins to form, sprinkle in the cayenne pepper. Adjust the amount depending on how spicy you like your cheese straws.
Keep mixing until a firm dough forms. It should be soft but not sticky. If it feels too crumbly, you can knead it lightly with your hands to bring it together.
4. Shape the Dough
There are two traditional ways to shape cheese straws:
- Using a piping bag or cookie press:
Fit it with a star tip and pipe long, thin strips onto a baking sheet. - By hand:
Roll small portions of dough into thin sticks (about pencil thickness), then place them on the tray.
Line your baking sheet with parchment paper to prevent sticking.
