Southern Hoe Cakes: A Traditional Southern Cornmeal Delight (Step-by-Step Recipe)

Southern Hoe Cakes are a beloved classic from Southern American cooking. These golden, crispy little cornmeal cakes are simple, rustic, and packed with comforting flavor. Made with basic pantry ingredients like cornmeal, flour, milk, and a little fat for frying, hoe cakes are crispy around the edges, tender in the center, and perfect for breakfast, lunch, or as a side dish.

Often described as a cross between cornbread and a pancake, Southern Hoe Cakes have a rich history rooted in traditional Southern kitchens. They were originally cooked on hot surfaces such as flat stones or iron tools over open fires, which is where the name “hoe cake” comes from.

Today, they are usually cooked in a skillet and served with butter, syrup, honey, greens, beans, fried chicken, or even topped with savory ingredients.

What Makes Southern Hoe Cakes Special?

The charm of hoe cakes comes from their simplicity. Unlike modern recipes that use many ingredients, traditional hoe cakes focus on the natural flavor of cornmeal.

The outside develops a beautiful golden crust while the inside stays soft and slightly creamy. The flavor is slightly sweet, buttery, and deeply corn-like.

They are:

  • Crispy on the edges
  • Soft and fluffy inside
  • Easy to prepare
  • Budget-friendly
  • Perfect for any meal

Ingredients

For the Hoe Cake Batter

  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 tablespoon sugar (optional)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ¾ cup buttermilk
  • ¼ cup warm water (adjust as needed)
  • 2 tablespoons melted butter
  • 2 tablespoons vegetable oil or bacon grease

For Cooking

  • 2–3 tablespoons vegetable oil, butter, or bacon grease

Optional Additions

  • 2 tablespoons chopped green onions
  • ½ cup shredded cheddar cheese
  • ¼ teaspoon black pepper
  • A pinch of cayenne pepper
  • Fresh corn kernels
  • Chopped jalapeños

Step 1: Prepare the Cornmeal Mixture

In a large mixing bowl, combine:

  • Cornmeal
  • Flour
  • Baking powder
  • Salt
  • Sugar (if using)

Whisk the dry ingredients together until evenly mixed.

The flour helps make the hoe cakes softer, while the cornmeal provides the traditional texture and flavor.

Step 2: Add the Wet Ingredients

In a separate bowl, whisk together:

  • Egg
  • Buttermilk
  • Warm water
  • Melted butter

Slowly pour the wet mixture into the dry ingredients.

Stir gently until everything is combined.

The batter should be thicker than pancake batter but thinner than cornbread batter. It should easily spread when spooned into a skillet.

If the batter looks too thick, add a tablespoon of water or buttermilk at a time until you reach the right consistency.

Step 3: Let the Batter Rest

Allow the batter to rest for about 10 minutes.

This small step makes a big difference because the cornmeal absorbs the liquid and becomes softer.

Resting also helps create a better texture with crisp edges and a tender center.

Step 4: Heat the Skillet

Place a cast iron skillet or heavy frying pan over medium heat.

Add vegetable oil, butter, or bacon grease.

Traditional Southern cooks often use bacon grease because it adds a smoky, savory flavor that makes the hoe cakes extra delicious.

The pan is ready when a small drop of batter sizzles immediately.
