🛒 Ingredients:

For the Chicken Marinade:

  • 500g (1 lb) boneless chicken breasts or thighs, cut into strips
  • 2 tablespoons plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Sauce:

  • 2 tablespoons butter or oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 small piece of ginger, grated
  • 1 teaspoon cumin seeds (optional)
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 cup tomato puree
  • 1/2 cup heavy cream or coconut milk (for dairy-free version)
  • 1/4 cup chicken broth or water
  • Salt to taste
  • Fresh cilantro (coriander) leaves for garnish

🍳 Step-by-Step Method:

Step 1: Marinate the Chicken

In a bowl, combine the chicken strips with yogurt, lemon juice, garlic paste, ginger paste, turmeric, paprika, salt, and pepper. Mix thoroughly until the chicken is well-coated.

📌 Tip: Marinate for at least 30 minutes. For best flavor, cover and refrigerate for 2–4 hours.

Step 2: Sear the Chicken

  • Heat 1 tablespoon of oil or butter in a large pan over medium-high heat.
  • Add the marinated chicken pieces in a single layer.
  • Sear for 2–3 minutes on each side until golden brown. You don’t need to cook the chicken fully at this stage.
  • Remove the chicken from the pan and set aside.

Step 3: Prepare the Flavorful Sauce

  • In the same pan, add the remaining oil or butter.
  • Sauté cumin seeds (if using) for a few seconds until they sizzle.
  • Add chopped onions and cook until soft and golden (about 5–7 minutes).
  • Stir in the garlic and ginger, sauté for 1 minute until fragrant.
  • Add chili flakes and coriander powder; stir for 30 seconds.
