  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 2 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce, optional for deeper colour
  • 1 tablespoon tomato paste
  • 1 teaspoon Dijon mustard, optional
  • 1 bay leaf
  • 1 tablespoon brown sugar, optional
  • 2 tablespoons plain flour
  • 3 tablespoons cold water

Step 1: Prepare the Brisket

Start by patting the brisket dry with paper towels. This helps the seasoning stick better and helps the meat brown properly.

Trim off any very thick pieces of fat, but do not remove all the fat. A thin layer of fat helps keep the brisket moist during slow cooking.

In a small bowl, mix the salt, black pepper, garlic powder, onion powder, paprika, thyme, and rosemary. Rub this seasoning all over the brisket, covering both sides well.
