What Makes Thousand Island Macaroni Casserole Special?

The main ingredient that makes this casserole different is Thousand Island dressing. It adds creaminess, sweetness, tanginess, and a mild pickle-like flavor all at once. When mixed with beef, pasta, tomato sauce, and cheese, it creates a rich sauce that coats every piece of macaroni.

Ingredients

For the Pasta and Meat Mixture

  • 2 cups elbow macaroni, uncooked
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon oil or butter
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon Worcestershire sauce

For the Sauce

  • 1 cup Thousand Island dressing
  • 1 cup tomato sauce
  • ½ cup sour cream or mayonnaise
  • ½ cup milk
  • 1 tablespoon ketchup, optional
  • 1 teaspoon mustard, optional
  • ½ cup chopped pickles, optional but recommended

For the Cheese Layer

  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese, optional

Optional Topping

  • ½ cup crushed crackers or breadcrumbs
  • 1 tablespoon melted butter
  • 1 tablespoon chopped parsley

Step 1: Cook the Macaroni

Bring a large pot of salted water to a boil.

Add the elbow macaroni and cook it until just al dente. This means the pasta should be cooked but still slightly firm. Do not overcook it because it will continue cooking in the oven.

Once cooked, drain the macaroni and set it aside.

For best results, toss the drained pasta with a small amount of butter or oil to prevent it from sticking together.

Step 2: Brown the Ground Beef

Place a large skillet over medium heat and add the oil or butter.

Add the chopped onion and cook for 2 to 3 minutes until it becomes soft and fragrant.

Add the minced garlic and cook for another 30 seconds.

Now add the ground beef. Break it apart with a spoon and cook until browned and no longer pink.

Drain any excess grease from the skillet so the casserole does not become oily.

Step 3: Season the Beef

Once the beef is cooked, add salt, black pepper, paprika, garlic powder, onion powder, and Worcestershire sauce.

Stir well so the seasoning coats the meat evenly.

Let the beef cook for another 2 minutes. This helps the flavor become deeper and more savory.

The beef mixture should be moist but not watery.

Step 4: Make the Thousand Island Sauce

In a large bowl, combine the Thousand Island dressing, tomato sauce, sour cream or mayonnaise, milk, ketchup, and mustard.

Mix until smooth and creamy.

The Thousand Island dressing gives the sauce its signature flavor, while the tomato sauce adds depth. The sour cream or mayonnaise makes it richer, and the milk helps loosen the sauce so it can coat the pasta properly.

If you like a cheeseburger-style flavor, add chopped pickles. They give the casserole a tangy bite that works very well with the creamy dressing.

Step 5: Combine Pasta, Beef, and Sauce

Add the cooked macaroni to the bowl with the sauce.

Then add the seasoned ground beef.

Mix everything together until the pasta is fully coated and the beef is evenly distributed.

At this stage, the mixture should look creamy and slightly saucy. If it looks too dry, add a little more milk or dressing.

Step 6: Add Cheese to the Mixture

Add half of the shredded cheddar cheese and half of the mozzarella cheese into the pasta mixture.

Stir gently.

Adding cheese inside the casserole makes the filling creamy and flavorful, not just cheesy on top.

Save the remaining cheese for the top layer.
